Self Expression Through Gimbap: The Sushi Chef with Toyoung

  • Toyoung, born in Japan and raised in Korea, expresses herself through pottery and gimbap, a Korean staple consisting of seaweed, rice, and other savory fillings. While Toyoung started her career as a ceramicist, she quickly began to realize that with every plate and bowl she made, she couldn't help but wonder what type of food would be served on it. She recently opened her own gimbap shop in Seoul with her best friend where all of her food is served on the pottery she makes in a small town outside of the city.

      One of my old friends' parents met in Japan. Her mother is Japanese and her father is Caucasian. Her mother didn't know a word of English when the two met and they instantly fell in love with each other without even understanding each others language. It's so incredibly insane to me the thought of that, but it's funny how love works I guess 😇

Pleasantly surprised Koreans making gimbap were featured in the sushi chef series. Wow, what a beautiful relationship the two ladies have. I can certainly see why Munchies made this video. She's an interesting character and "Korean sushi" adds a different aspect and perspective to their Sushi chef series. The Korean take on sushi is interesting, acutally. They often dip the sashimi in sesame oil and salt, and it's often served very cold, sometimes near frozen.

    I tried to have an open perspective, but this episode missed the mark. I think it would have been better to have released it as a standalone feature. Firstly, as many comments have already stated this is not sushi. No sushi rice, no raw ingredients, barely any fish. I think it does Korean culture and sushi a disservice to try and present kimbap under the "Sushi Chef" series. A lot has been said lately with regards to "cultural appropriation" of food, and this seems like a blatant misunderstanding of what sushi and kimbap are to their respective cultures. Kimbap is a democratic food, an everyday kind of snack you have on-the-go. Sushi is an event. Most Japanese eat it as a once a week or monthly treat. At the end of the day, they are both still food, but for a lot of people sushi and kimbap are two completely different things that just so happen to appear similar.

    In case people are interested in the difference between kimbap and maki sushi.
    - Maki sushi uses roasted nori seaweed, kimbap is flexible with it's choices
    - Sushi rice is made with rice vinegar, while kimbap typically uses steamed white rice (other rice are used) and flavored with sesame oil and salt.
    - Maki sushi uses one or two ingredients, thus resulting in a smaller diameter. Where else it's common to use four - six ingredients in kimbap. Thus making it larger.
    - Maki uses raw seafood. Kimbap does not, fillings are usually cooked. Some of the ingredients seen are, raw or pickled vegetables, egg, ham, immigration crab meat amongst many others.
    Although they may be visually similar to the foreign eye, all these differences form different taste, texture, and experience. From the setting it's usually eaten in, type of seaweed and how it was prepared, the rice, ingredients following it, and size of the sushi/kimbap.

  • @whatsinmymouth-
    @whatsinmymouth- 8 лет назад

    A lot of confusion and fighting here regarding gimbap vs sushi and I'm hoping to clear it up:
    Sushi is vinegar rice. That's the main requirement of sushi.
    Gimbap means seaweed rice and therefore, the requirements are that there is rice and seaweed.
    There is obviously a place where sushi and gimbap can potentially intersect, but the crucial difference is that gimbap is almost never seasoned with vinegar, and sushi doesn't need seaweed. All nigiri is sushi but cannot be classified as gimbap. Technically all maki sushi made with seaweed could be called gim bap. Because gimbap almost never uses vinegar, almost no gimbap can be classified as sushi. The korean word for sushi is chobap.

    all of you clowns in here saying this is not sushi are just so ignorant. sushi is merely seasoned/vinegared rice that is combined with something else. if you watched jiro dreams of sushi the emphasis is on the rice preparation. that's because sushi is all about the rice - because that is what sushi is - vinegared rice.

    • @KlysmaTV
      @KlysmaTV 8 лет назад

      you are not getting it. Sushi is not all about the rice, and neither all about the fish. It is a synnergie. But, because high quality, fresh fish does not need anything, sushi chefs focus mainly on the rice, the part that they CAN control.

    • @orangemoonglows2692
      @orangemoonglows2692 8 лет назад +3

      Robert Kraamwinkel
      again, BY DEFINITION, sushi is vinegared rice combined with something else. that something can be vegetables, beef, fish, etc. YOU do not know what sushi is. this is what it is. your blubbering ignorance does not change what sushi actually is. now go back to eating your dynamite roll.

      so, what is the difference in terms of ingredients, technique? if they both use vinegared rice, they are the same, just have different names and one is made by japanese and the other by koreans. but if koreans don't add vinegar or techniques to make it ferments, it's not. simple. i don't get these arguments.
