- Yoshimasa Ikeda learned how to make sushi back in Tokyo under the instruction of his father. Wanting to see what more of the world had to offer, he ended up on America’s west coast. He eventually settled in Portland, Oregon and created Yoshi’s Sushi, a food truck that serves fresh sushi daily. His cart specializes in Hokkaido scallop, salmon, and tamago nigiri. He also makes classic rolls like the California roll and spicy tuna roll. After spending many years training people to become sushi chefs, Yoshi took a demotion so he could spend more time cooking, and then went on to start his own business.

Only two operational states for this guy. He’s either open, or sold out. Never closed. Gotta respect the hustle.
Your comment is brilliant!
That mentality is truly excellent 🤝💯
@PeePee2000 fair, but if this man wanted to get rich he would have kept the manager job
@@johnr797 nah manager is still working under someone and getting paid by the higher ups, he is making more opening his own business
that literally made me bust out laughing... was like hot damn .... :O
He came to OHSU and feed the entire ICU floor for free during covid. Best Sushi I've ever had and thank you so much for your kind words🙏🏽
Wow, what a great man. I am jealous!
@@klis4979 Nicest guy ever and was super helpful to all the staff during covid!
What absolutely amazing person.
Wow that’s amazing 👍👍
So wonderful and thoughtful 💗🍣
He still uses a flip phone. So you know he's about his business.
This is the way.
flip phone is really famous in japan .you know?
The hustle never stops!
Could just be his business phone. Longer battery. Cheap. Doesn’t mean he doesn’t have a personal smart phone.
That means it's a burner phone
This guy literally asked to be DEMOTED because he missed using his knives and doing sushi. That’s how much he loves this.
I agree. Sometimes, promotions aren't the golden step-up-the-ladder we think of it as. I've heard some cases like that when I worked in corporate - people who resigned one year after promotion because the new position barely gave them any happiness.
@@jmason0622 This is true. I've heard stories of people going from technician to junior manager position for way more money, but they hated everyday. End up going back to what they did before for less pay because if you love what you do, you don't work one day in your life. Money is great, but it doesn't solve everything. Just don't put yourself in huge debt or need to buy the next fancy widget where money controls you.
And still uses a flip phone
dude, flip phones connects you to the matrix
he could have become a crime fighting vigilante by night , killing super villains with his suchi knives ! ... ok its past my bed time, i gotta go
This is a great business model-- fresh sushi without having to pay the overhead costs of a brick and mortar restaurant. I've probably payed twice as much for sushi that looks half as good as this. I would absolutely eat this quite often if it was near me.
Its also returning back to the roots of sushi in a really cool way, since it was street food a couple hundred years ago
Totally agree !!
@@saran42yu can you explain how it was street food?
@@organizedchaos4559 in edo period japan sushi was sold in pushcarts along the street as fast food
@@organizedchaos4559 and the wasabi was to mask the . . . not so freshness of the fish since there's no refrigeration or packing it in ice at the time.
Food truck owners are the most wholesome people.
100%
Dude suh
Nice profile pic.
I'm pretty sure this is my first YT comment ever. But I live near Yoshi and hes an amazing guy with amazing sushi. Really glad to see him get more press :)
Such a hidden gem, I live nearby too and Yoshi's always nails it
I rarely comment either, but watching this truly makes me happy. I'm glad this video was made of him, hopefully he sees more business although i'm sure he doesn't need it. I'd love to come and try his food one day!
you lucky bastard, if we want good sushi in Toronto, we have to pay at least a $100 to get full.
How i wish i lived near this fella. We need more amazing sushi chefs in Malaysia
@@jasielle We do, just a matter of if you're willing to pay lolol
We need more ppl like Yoshimata in the world
get well soon harden
Yoshimasa*
Yeah as soon as 3 of you play together lol
you have a country full of them. japanese people are on another level
@@ghlmm5863 that’s exactly what I was thinking of commenting them dudes on a whole nother stratosphere
He's not wrong about keeping clean. That food truck is spotless!
Seriously good looking sushi though.
this dude is so confident in his business he only has a ''sold out'' sign, gotta love it
What a hard worker and a humble man. I hope for the best for his business and health. Congrats for making it to the US. It is hard to maintain a small business during the pandemic and in general.
Checkout Seaspiracy on Netflix & get a clue dumdums
Is it an accomplishmet, to get to the US? More like keeping up the business, like you said. :)
@@shlomovenezia101 lmao who cares. we're nearing the geological capabilities of humans anyways and theres nothing that can stop it. humanity will begin crumbling sometime during our lifetime. might as well enjoy your damn life while you can because the world isnt going to change.
making it to the US is a massive L in my book but to each their own.
Cool then don't live here lol@@winterwarden
3:16 OMG the way he slices that avocado is so satisfying to watch!
tell me that wasnt the most impressive slicing everrrr
@@alfietran8149 that wasn't the most impressive slicing everrrr
"I met my wife, she was the server and I was the sushi chef typical story"
Classic...classic...
His passion and dedication to his job and the way he makes his customers feel comfortable it's like you're right at home, you can tell how much he cares to put a smile on your face as much as he puts his love in to making these delicious cuisines is so awesome!!
No one in my home likes me...even the plants try to bite me sometimes.
@@michaeljackson8390 but the content on your channel indicates you are worthless?! You only expose your weakness and your cry for love. Why? No one deals with someone as worthless as you are, you feel me?
I've eaten Yoshi's sushi a number of times. It is as good as you imagine!!! He is also so kind and friendly. I knew he worked a lot, but this really shows it!! Well done, Yoshi. So grateful you're in business.
the world has so much to learn from the Japanese. the devotion to their passion is nothing short of amazing
He's really an artist and he gives pretty generous cuts of fish with his nigiri and sashimi. A pretty optimal combination.
The dudes got a flip phone. He is legit.
Does that make sense to you 😂
Little boi stfu
his passion is contagious.... this is true definition of DO WHAT YOU LOVE, because at the end of the day that's all that matters.
This man is so humble. I told him once that this was the best sushi i've ever had in Portland and he simply laughed and seemed rather surprised.
I think that “SOLD OUT” sign must be used a lot 👍👍😂
I'm so envious of his life, guy just does whatever he likes and feel like. Just being content with work
He can't do whatever he feels like, he has a business to take care of. 12-14 hrs a day. Mad respect. I know it can take a toll on people.
Well, the best part is no one bosses him around.. One of the greatest feeling in the world...
@@johnherrera2132 lol in the restaurant biz ? the customers boss him around that’s just the reality 😂
This editing style reminds me of great big story. I miss them :(
the music and all :(
There's just the upbeat narrator missing
Humble, respectful and a master of his craft. I really love the Japanese mentality and their methodical attention to detail.
Now there's a man who truly loved what he does when you ask your manager to demote you a position that you want.
This man is so humble 😭
👍👍👍👍👍👍👍👍👍👍👍👍👍👍👍👍👍😪😪😪😪😪😪
Yes, a wonderful and humble man so yes, some have noticed that he still uses flip phone.
The man is king 🤴
I miss Portland Oregon. He is a hard worker. He has mastered his craft. What dedication and honing of skills
Street Food Icons is easily the best thing on Munchies!
He put his heart and soul into the food he prepares. A great chef in his own right. Deserves all the patronage that he can get.
His passion and energy is such an inspiration! Gave me so much joy to watch this video.
Working by yourself is the best thing ever. More than half the headache from work is other people. This is a dream
Authentic and passionate people are so inspiring
I had to watch this twice because I loved this video. I showed it to my kids about the meaning of integrity and work ethics.
I was just smiling the whole time, I love his attitude about food and cooking. I hope he remains happy for the rest of his life
Thank you for all your hard work. We need people like you. Stay safe and wish you all the best. Hope one day I can taste your delicious sushi🙏🙏🙏
Men who cook well + care about the people around them never fail to impress me.
This really might be the best food series on youtube. Every single ep is inspiring. Kudos to y'all for finding so many interesting people!
love to see more content about portland's food trucks! i will totally stop by yoshi sushi to grab a bite sometime soon!
The passion, integrity and determination he has; says a lot about the quality of food he produces. 👍🏼
You love your job. That's what matters more. Keep growing. Keep feeding. Keep working hard. All the best🤗🤗
Legend. Food looks amazing. Keep being great yoshi!
I live about 1 hour north of Portland but I intend to check out his place, heck I'm not really into Sushi but I'd like to see his business anyway. Well done Munchies.
That’s love and passion right there! Hopefully I can try Yoshi’s sushi soon! ❤️
I hope this video blows up!! An amazing chef and a human.
Congrats on your success. Well deserved. Working hard always pay off. God bless you and stay humble. Stay safe.
patience is key 🔑
such a hard worker, can feel the passion.
This guy is incredible. People like this are rare and so important to a community.
This men is amazing ! He loves so much his job. I love his passion
I love him. I love this man. He’s doing amazing things and he’s doing it VERY well.
incredible, outstanding, so much heart into sushi and preparing his food as well as cleaning everything. Love it ! keep it up
Love the food scene in PDX and hearing stories like this does a heart good. Less rioting and more people like this making a positive impact. Please & Thank you 😊
This so awesome to see!! I wish the best for his business and I am definitely going to have to make a trip out to try some
Happy to call this place home! His food cart is delicious!!
I love hearing how he keeps the menu small and fresh. It’s just the best way to do it. Yes it’s a lot of work and there might be more anxiety but if you take care and pride in your food and work and prepare food that can help you keep up you’ll do fine so that makes me happy. Keep the menu small and the quality high. I’d rather go to a place that has either one specialty or a small single page menu I want a good quality meal and to get to know the chef is one of the best parts of these type of businesses :)
"What, he's not browning the Tamago?!" I thought and then he hot stamped each bite. Most friggin' impressive.
Much respect, I love that you are doing sushi on a food truck! I am learning how to do some Japanese food because I wanted to expand on my range of what I can cook. I grew up on Italian American food and that is my specialty but I adore Japanese food, I love how it combines aesthetic beauty and flavor! I am hoping to get a food truck going for myself where I can make really good Italian American food.
His. Hard work did pay off I’m so happy for him and I hope he continues to live what he does 🥰
This man is an inspiration! I would love to travel to Portland just to meet him in person.
Good staff from my fellows Asian . Never Give up 🙏🏻
That sear stamp on the tamago is absolutely genius.
This food truck is on my bucket list now. Thank you for posting this video!
YES NEW STREET FOOD ICONS VIDEO!!!!!!! WOOOOOOO these are the best

Perfect example of it not always about the money but doing what you love and makes you happy is much more liberating for you only have one chance to live to do you....respect sir👍👌✊✌👊
absolutely just found new food truck to try! The way he puts his passion into each slices of those sushi makes me craving them so bad!!
I live a few hours away in Central Oregon, you can bet I'm going to make the drive to try this sushi and support this man!
everything on the menu looks so good
Kudos to you Yoshimasa-san! Very true it is very rewarding so much even though the time takes over! I hope one day I'll stop by in Oregon to pay you a visit. Awesome knives and skills with over 20yrs bruddah! I LOVE sushi and sashimi as well as poke! Keep up the good work and stay safe!
This chef is an artist on the art of sushi making. Amazing
beautiful to see things come full circle
AWESOME 👌 GREAT JOB 👍. Need more people like you.
I love Yoshi's story, Portland is my number 1 spot when I'm ready to take a trip. I'll definitely have to give his truck a visit.
Thanks for sharing 🌻
Amazing dedication, awesome guy, will definitely visit his food truck when visiting Portland
I ordered today and I gotta say it was definitely the best sushi in the area!! Way to go Yoshi!
6:26 the lady's so cute and wholesome... we need more of this positivity.
I absolutely love his story ❤️ May God bless him 🙏 Greetings from Borneo, Sarawak, East Malaysia 🇲🇾
I made it! Called Yoshi late morning for afternoon pickup.
Going for sushi has always been about the experience of the location, interacting with the chef etc. This is what always made it memorable!
Yoshi is able to put that memorable experience entirely into the food! Amazing chef!
Thank you!
This was so splendid, we need more quality food craftsmen like him.
I assume most of the people watching this video wish they were eating this now. I Definitely wish I was staring at these dishes now.
everything looks so good and fresh
Awesome story and so cool to see Portland Oregon on here!! Imma have to go try it!
This video was so wholesome it Deadasss brought me to tears
Oh wow I kind want to try! It looks yummy!
Thanks for this video
Dear Yoshimasa Ikeda! What you are doing is art and just a great love of food. Ecstatic and impressive!!!
Since you are originally from Japan, this reminds me of a video about small Asian dwarf otters, Miss Hana, Professor Kotaro and Captain Aty 😂😂😂 living in Tokyo. They adore fish, they are crazy about salmon, scallop, sashimi 🤗, and especially Miss Hana , who "kills" 🤣 for salmon. I have never seen in my life that animals are such gourmands, laughter....
Oh, yes, they have to try your specialties, yummy, yummy, yummy, 🤣🤣🤣🤣🤣
Thanks for this wonderful video from Croatia! ❤
Nice episode, wish him all the success and happiness he deserves
So impressed... Respect
If I ever go there I WILL be calling ahead for that sushi. Looks amazing.
This is so inspiring. I've always wanted to have my own food truck or maybe open my own cafe someday...or just work in a cafe. I just love to make tasty food that people will like.
This is where you eat very high quality sushi. All the best for this guy.
Imagine a immigrant coming to America, Starting his own business and enjoying what he does and paying off his home through hard work. So beautiful
His story is not new - millions before him have done it. America is a nation of immigrants except for the original Native Americans.
@@MTMF.london Nota Bene -- African slaves (in the 'colonies' which eventually became America/U. S.) also were not "immigrants."
Good job Yoshi!! 💕💕
one man show..much respect!
love this guy's energy
This is why I miss living in Portland. The food carts 😩😩😭🤤
"I think of street food as the antidote to fast food; it's the clear alternative to the king, the clown and the colonel." I love those who cook with love, and you, dear chef, cook with love. Your Sushi made my mounth water. Respect! Cheers, Domenico.
The greatest thing about him is that he loves his job and do it with honesty.
