Today is March 31, 2020, and the Covid-19 pandemic is wreaking all kinds of suffering and panic over the whole world. But, getting back to the things that will continue to be important years from now . . . this dish looks delicious. As a Canadian, I have never heard of Corn Pudding. I am a great fan of Corn Bread and Corn Muffins, though, so I am happily anticipating making and trying your recipe. That Jiffy stuff is another newcomer for me, but if I cannot find it up h ere in the Great White North, I will just substitute a from-scratch corn muffin recipe. God bless, and stay safe.
My Grandad kinda sorta looked like Shotgun Red. When I was a kid we took a family vacation to Nashville. While there we had to buy a Shotgun Red doll for Gramps. I have lost all my Grandparents and miss them all terribly. I came across this video and was pleasantly surprised to see Shotgun Red. It brought a tear to my eye but also a lifetime of happy memories. Wish I knew what happened to that old doll. Thanks for helping me remember good times with the ones I loved most. On top of that... It's just as you made it but add: 1 Fresh Jalapeno, chopped(remove seeds and veins) 1- 11/2 Cup(s) grated Sharp Cheddar Cheese (mixed in) 1 Half Cup Sharp Cheddar with 1 Half Cup Monterey Jack Cheese Sprinkled on top just before baking. Bake as you did your recipe. The version that was given to me was from an old man in the country... His instructions were to "Beat the H*LL out of the whole mess, then dump in a cast iron skillet." Geez...I LOVE Precious Country Folk!! My family was from Sparta, TN and I married a wonderful Texas Man (Born & Raised). Been married for 36 years and LOVE it here in Texas (but y'all just make me happy)!!
Mexican Cornbread could be made slightly easier too, IF.... 1 box mix, 1-2 egg, 1 stick butter, 8oz sour cream, 1 can cream corn... + 1 can drained "mexicorn" kernels (has peppers already cut up & in it, sold by canned corn)... maybe some shredded 'mexican style' cheese blend IN it + if want slightly more 'kick'.. a splash of whatever favorite salsa you have on-hand (for flavor & added chunks of veggies) & some chiuhaua or cotija (that's more of a crumbly grated consistency & authentic) w/ a tiny bit of 'cumin' seasoning (or adobo) on top, added just before baking .... nom... nom. (gonna have to go make that now, darn it!) Could be served w/ a little extra sour cream, salsa or just butter on side.... or nothing, just eaten as is. Deeeeeelish! ENJOY :)

Finally made this as I needed a fast dish for an impromptu family get-together. I was so sure I had sour cream, but I didn't. I substituted cottage cheese. Turned out perfectly (higher protein and fewer calories....it's delicious.

Tried this recipe. Very good with a cup of hot coffee for breakfast. Maybe a little buttery and a little sweet. Next time will cut the butter and sugar in 1/2. Will use 1 stick of butter and only 1/4 cup of sugar. No need for butter patty on finished piece. Double the sprinkled sugar before baking.
I like to put the castiron pan in the oven with the the butter then add the remainder of the ingredients & the seared ingredients underneath is amazing

It didn't matter, it disappeared in the blink of an eye and I had plenty of compliments. I've tried it since with the Jiffy and it is even better with it. Hate to see he is gone. Didn't have enough sour cream and no jiffy mix or cornmeal, added banana bread muffin mix and pureed pineapple. I'll let you know in an hour. I love jiffy mix though, added sugar on top. I hope it hurries.

I have some Greek yogurt I am going to use for the sweet version. I'll make that tomorrow. I can't wait to see how this comes out. I love using vegetables in sweet dishes. The kids enjoy eating them so much more that way.

Mom used to make something similar - except it didn't have any sugar in it. We ate it with fresh tomatoes and either bacon or fatback fried.

When I make this I put 1/2 lb freshly grated cheddar cheese in the mix as well as a small can of chopped green chilies, mild. It’s totally awesome.

If using Jiffy you don't need the sugar...I make mine only with the jiffy and it's delicious and sweet

The Jiffy corn bread mix boxes have perforations on the on the side. Jam a thumb in there through the box and the baggy and pull the top off.
Looks good. Will try with less sugar for family health reasons.

The bag inside the Jiffy Cornbread Mix has ALWAYS been glued to the bottom of the box. Doesn't make any sense to me either!
Secret: You just open the top and don’t try to take it out the box, it’s not meant to come out the freshness pack, simply unfold it. 🤫
Open the top of the inner bag and empty it into whatever bowl you are using.
The glue keeps the bag from falling into the bowl.

Yummm... thank you for sharing this recipe. I'm thinking no vanilla, some fried crumbled sausage with some chopped green onions for a one dish meal with some maple syrup drizzled on top. Will be making this tomorrow night!

@@CookingwithShotgunRed So, I did a savory version of it (replacing the sugar, vanilla, and nutmeg with salt, smoked cayenne, and rubbed sage) and just about hit the floor it was so amazing!!!! I have some Greek yogurt I am going to use for the sweet version. I'll make that tomorrow. I can't wait to see how this comes out. I love using vegetables in sweet dishes. The kids enjoy eating them so much more that way.
