How to Store Cured Garlic

    Here's what we've done with this garlic thus far:
    - The process starts the fall before when I plant all the individual cloves.
    - Then, from the end of June to the beginning of July, I harvest all of the heads of garlic.
    - Once they're harvested, they need to be dried and cured. In a shaded area (I use my garden shed), I place the heads on old screens for good air circulation. Usually, this process takes 2-3 weeks.
    Once all the stalks and leaves are completely dried, it's time for the finishing steps:
    - Cut off the roots and trim the stalk down to 1 to 2 inches.
    - Clean off any dirt from the husk.
    - Transfer to my basement or any dark area. At this point, they're ready for use!
    Just FYI: These hard-neck garlic varieties do not keep as long as soft-neck. Hard-neck will keep 4-5 months and soft-neck for 6-8 months.
    In a short time, I'll start this process all over again!

    When I have a lot of extra garlic that I don’t want to spoil, I chop it to freeze in small cubes or flat ziplock bag (to break off pieces). I fill the cube container with chopped garlic and pour Avocado or EVOO over each cube to cover. For Ziploc storage, I line a small rectangle container with wax paper, add about 3/4” chopped garlic and pour avocado or EVOO to cover, freeze overnight, then peel away the wax paper and move the garlic flat to a Ziploc bag. I break off pieces as needed to cook with. I also make a WONDERFUL garlic butter to freeze.

    Those look beautiful! I would love to see videos with ideas for what to do with an overload of garlic, how to can or preserve it, etc. I've really enjoyed your tutorials on canning and bottling things. :)

    Thank you for this. I have seen videos of people cutting the stems right after harvest and some keep it on. Does it make a bug difference to keep it on as you do? Thank you.

    I just watched another video and they said that hard neck garlic lasts longer .. you just said the opposite .. so which one is true
