can't wait to try this version. great technique on clipping the paper to the pan like that. really holds it in place. peeling back the parchment when the squares are set is my fave part. it looks and sound so satisfying, lol. nicely done.

There're no Butterscotch Chips here, could I use butterscotch soft candies instead (that can be melted I'm sure) and what would you recommend as how many candies should I use? These look wonderful stephanie I've never made homemade marshmallows before but I will try that now. Can I use dark or white chocolate chips ? We don't have butterscotch chips here in Australia.

I tried to make marshmallow before with gelatine but my marshmallow did not set after 12-14 hours. instead they were a gooey mass and only hardened after I put that in refrigerator! It again became gooey in room temp. after few minutes.. I used hand mixer for beating and continued to beat for good 15 minutes. here summer temperature ranges from 30-37 degree Celcius... Can you gimme some suggestions???

I make so many dishes for Christmas and I love the sound of this, but for right now, would that be possible? I will try my hand at homemade at a later date. Which peanut butter do you use? The natural one which requires stirring of the oil on top or the processed one which may contain other ingredients other than peanuts and salt? I ask because in some recipes the natural one doesn't combine the intended way and can ruin the recipe.
I didn't know one could make their own marshmallows. Looks yummy, but - I can't do that. I do have a container of marshmallow crème. I may spread it out and let it set up and then slice it as you did. Also - it says four ingredients, but that's assuming the marshmallow is already made; and I don't have a stand mixer, or a candy thermometer.
Would it be ok to drop some cooked syrup into a glass of water to see if it is in the soft ball stage? For those of us with no thermometer? Or is the temp too critical? This works for fudge for me.

I've never tried it, but you could use either the dark or the white chocolate chips.

You could use the commercially made miniature marshmallows. It will still taste really good.

It's easier with a candy thermometer, but you can check the cooked syrup that way.
