In the large category of cheesecakes, the one that is often overlooked, is what some call a "mock" cheesecake, but what I prefer to call a "No Bake" Cheesecake. A No Bake Cheesecake is just that, the filling is not baked in the oven. But don't worry, this cheesecake still has that rich and tangy flavor of cream cheese, and it is still smooth and creamy. The difference is that it does not contain eggs or flour (or other thickeners) and that is why it doesn't need to be baked. This also eliminates all the problems normally associated with cheesecakes, like over baking and cracking.

Oh...My...Goodness! I made this today and it was an absolute WINNER!! I actually made one with a macerated strawberry topping. And another that I folded crushed Oreos through to make a cookies and cream flavour. Thank you SO much for sharing your recipe. This reminds me of going to my Auntie Marge's house when I was just a little girl and she would make this dessert often. She used the canned cherries too. Often she made a large 9x13 pan as they had 5 kids and then there was my sister and I. Such fond memories. Oh and she makes the best pie crust ever.
I love this recipe and I've done so many variations (e.g oreo, mint, chocolate) with it and it always works

I tried this recipe yesterday. Over whipped my cream and my cake still looks runny after almost 24 hrs in the fridge. It was not as easy as I thought it will be but it was a great time and it really does take less time. Looking forward to giving it another try because that is what I am sending to a cheese-lover for Christmas. Thanks a bunch for the lessons. You are making my new found baking hobby fun.

Your recipe for graham crackers is great! Can't find them here in Danmark but graham flour is everywhere. They taste better than store bought that's for sure!

If you used regular whipping cream the cheesecake won’t firm up enough.

A good alternative to graham crackers are Speculoos cookies. Biscoff brand cookies are pretty readily available in the U.S. Another good choice to boost flavor are Italian Amaretti cookies.

After experimenting with Instant Pot cheesecakes, I'm going to add this no-bake beauty to my recipes. The only change I've made is to make a cherry topping from frozen berries. [I have T2 so I want to control the sugar.] Thanks so much!

I would also add a bit of almond extract to the filling if I intend to serve it with cherries. Cherry and almond is a classic flavor combination that I just love. In fact I might substitute almond meal for part of the Graham cracker crumbs too.

I love this idea!! My cheesecake always crack. I can't figure put why. This will be great for me!!
Baked cheesecake usually cracks when it cools too quickly. I've had mine crack. They usually recommend at the end of baking the cheesecake, to turn off the oven and crack the door open and leave the cheesecake in there to slowly cool (can't remember for how long.)
Cracking is just for visual aesthetics anyway it still tastes great.
