Meyer Lemon Peel Candy: No Sugar Added!

  • Don't know what to do with those Meyer lemon peels after you've used them? Make Meyer lemon peel candy the low-carb way!

    You will need:
    10 to 15 Meyer lemons
    3 to 4 cups of water
    1 cup of allulose sweetener plus another 1/8 of a cup after you cook it.

    Knife
    Olive Wood Cutting board: amzn.to/3qziTfh
    Ball / Mason Jar Citrus Juicer: amzn.to/3A9AJda
    measuring spoons and cups
    stock pot
    straining ladle
    Nesco food dehydrator: amzn.to/3hezOzf
    (You can dehydrate this in the oven if you put it on a low temperature under 150° for approximately 18 to 24 hours)
    Cookie sheet or jelly roll pan

    Mason jars
    Wooden Jar Lids: amzn.to/36dS7zL
    Instructions:
    Gather and thoroughly wash and rinse your lemons
    Cut the lemons in half and juice them with the juicer into a large mason jar
    save this juice to use to make lemonade or other items later
    Once the lemons are juiced you will peel out the membranes and discard them.
    Cut your lemon peels into thin strips.
    Place equal amounts of lemon peel and water into the stock pot.
    Add approximately 1 cup of allulose sweetener
    Bring this mixture to a boil until the lemon peels are beginning to become translucent and soft
    Use a strainer to remove lemon peels in place on parchment paper lined tray
    Save the sweetened juice to use in lemon aid or salad dressing - this will keep in the fridge for about a week
    Add the remaining 1/8 - 1/2 cup allulose and mix well.
    Lay out lemon peel strips onto dehydrator sheets
    Dehydrated 135° for 24 hours.
    Once dry and leather like, store in Mason or Ball jars. These should last a few weeks in the jars.

      Hi Teresa, Depends on the TSA agent but generally, yes, you can bring fruit through TSA even if it’s cut up.😀

      @@TheoryofSimple I don’t think you read my question. I was asking if you could use whole slices of lemon vs just the peel.
      Not sure where TSA comes into play

      @@teresagaile5670 If you’re going to do it with whole slices of lemon or orange you may want to put them in a dehydrator first to remove much of the water from the pulp.

      @@TheoryofSimple it can't be purchased in much of the world (specifically Europe and Australia) as it hasn't been approved for human consumption

      @@cassieoz1702 you will have to substitute for another approved sweetener and see if that works or go with the full sugar version 😊

      @TheoryofSimple yeh, it's just off the menu for me which is a pity because I've always loved candied peel. I can't do sugar these days and the sugar alcohols are nasty in this kind of application.

      @@cassieoz1702 yes. The sugar alcohols make my stomach grumbly! Sugar is not good for me any more either. 😟
