I use a lot of lemons and buy them at Costco, but often just toss the used lemons down the disposal to freshen up the sink. How fortunate you ae to grow your own lemons and have inspired me to make the candied peels and then the stollen for the holidays. Great gifts for my neighbors.
I almost cried when your drained all the boiled water, im saving mine for sips while sick. Or even making a room sprits to keep dogs or cats from scratching furniture! That stuff is gold.
Really helpful! It’s quite expensive to buy here in England for what it is, and I love including chopped lemon peel in cookies but don’t like paying the price. Stollen is amazing too! I will try to do it all in my dehydrator.
@@OurGabledHome - Hi Anja, I have to share with you that I absolutely loved your video about the no discard/no feeding sourdough starter. That is such a great idea. I make this every year from our lemons from the trees but I never leave the pith on the lemon strips... I scrape it off.. better lemon peel candy for sure.
I found this recipe, which certainly is traditional, after I went off-road, but with surprisingly good results. I used similar amounts of sugar/water and medium heat, but I did not trim all of the pulp off, added the juice to the mixture and added a tsp of salt - then simmered up and down the heat for 3 hrs+. The result: a very mellow citrus flavor with caramelized, brown syrup and a nice slightly bitter citrus edge which balances the sweet. Its time to add to various dishes, the first is in fresh hummus. I will try this recipe, too. Thank you.
I would certainly add these to some fruit snap cookies I make at Christmas but I add some organic lemon to smoothies - peel & all in the winter months for extra vitamin C
These look great. And would taste delicious in the Stollen. I was wondering how you store them and how long the last? Thanks for your many lovely and traditional recipes. I have a German Mennonite heritage, so I am familiar with alot of these items! 😊
This is the way to go for candy. I used to be a big candymonger but growth is now horizontal and not vertical; reading the ingredients in the candy isle is a disgusting turnoff. With this recipe, you have to work for it and thus appreciate it more; you also know exactly what’s in it.
Thanks! I'm gonna start doing it, since I have great lemons in my backyard. How long candied lemon peels will stay good for, stored in a jar at a room temperature? And how long will they stay good if I freeze them?
Great questions! If you want to store them, I would toss them in additional sugar and cover them tightly. They should last at least one month at room temperature. You can also refrigerate or freeze them (they should last a few months). Hope this helps ~ Anja
Thank you for this, I’ve been looking for an old method. Wondering though, don’t all the lemon oils get tossed in that first discard? That’s precious stuff, no?
yes, the method to make candied ginger is very similar to making candied lemon peel. However, you don't need to boil and drain the ginger 3 times, only boil once, and then simmer in the sugar water. Hope this helps and thank you so much for commenting 💛 ~ Anja
Since I sadly don't have my own lemon/orange tree is there a tip on how to get rid of most of the pesticides from the peel? Or do most of them get destroyed in the process? I'm always very hesitant working with peels because of that.
well since your boiling it multiple times i assume that the bacteria’s and pesticide naturally die. i’m not sure but it should be safe. also try to buy from local farmers where they don’t use pesticides. hope this helped :)
Hello 👋. Won't the boiling decrease the lemon flavor from the peels? Does the finished product becomes dry or will it be moist? And what are their shelf life? Thank you.
They do keep their lemon flavor b/c of the oils in the peels and therefore they will stay moist in an airtight container. They should last 6 months, possibly more ~ Anja
Since you boil and drain the water three times to remove the bitterness, I wonder if a person could use the peels that have already been zested? Do you know? Partially zested maybe?
@@OurGabledHome I did it! I was finally able to get some organic lemons from Azure. I zested them then dehydrated the zest. Then I juiced them. Then my daughter and I are the pulp with a touch of salt. Then I sliced the zested peels and boiled them in the sweet liquid. My daughter ate all of the lemon peel candy. ☺️
