For those trying to troubleshoot allergies and gut problems, pre-shredded cheese contains starch, which is a no-no on keto and carnivore diets. This pre-shredded cheese also contains natamycin which can cause allergic reactions such as skin rash and inflammation of the face and eyes.‌ Other brands of pre-shredded cheese also contain dextrose and cellulose. Instead, shred a block of cheese, which doesn't contain these unfriendly ingredients. Laura, thank you for this delicious recipe! (Day 161 of carnivore. Healing from Crohn's disease)

I love this! I'm a taco (or Mexican beef) fanatic, too, and every time I pull out ground beef I think, "Maybe I should just turn this into tacos real fast..." About half the time I do! And that's in addition to the times I plan on it! 😂
This is one of my two favorite ways to cook chuck roast - as pot roast or as Mexican Shredded Beef. I do use individual seasonings because that's just my preference and I have no issue with things like cumin, etc. I also add some Pace picante sauce for part of the liquid, but again, I'm more ketovore and onions and tomatoes are 2 things I've chosen not to give up.
I've been making the cheese shells like this for over 15 years, but never thought to not flip if making in the skillet and leave the cheese melty the close it around the meat. Sort of like chubby taquitos! Oh, it's ON!!
    Love to watch you Laura!

Just a hint from a New Mexican, remove the stem from the red chiles before you ad them. And maybe no taco seasoning but add um . . . . 6-8 red chile pods, 4-5 cloves of garlic (or more you can never have too much garlic in red chile), maybe around a tsp or so of Mexican oregano, cumin, and a TBS of onion powder, salt to taste of course. When you make the tacos add a good squeeze of fresh lime and enjoy!

I had seen references to the carnivore diet some time ago from Dr Jordan Peterson. At that time I thought it was interesting but probably not for me. A bit of time went by and I was slowly getting heavier, I often felt bloated and my bowel movements were frequent and loose. 5 weeks ago I made a decision to try carnivore for a month. I am down 16 pounds and feel much better. In that time I found your channel and have been enjoying your down to earth advice and ideas. Thank you

I do my chuck roast similar without adding any water... The only thing I add is some Kerry Gold and seasonings. Once it's shredded, I thoroughly mix everything back together. One spice that's extremely good with it is lime pepper by Fiesta Foods.
