You can actually take a little pork sausage and break it up like hamburger as it is fried and keep 2 to 3 spoon full if pork grease add 2 to spoon full of flour or a liitle more large spoons for lots if gravey, brown the flour and and slowly add milk remember you can always add more milk, but you can never add more flour after you start adding milk
One of my favorite meals growing up and to this day is fried pork chops, rice and gravy. Was my number 1 pick when I went home on leave when I was in the navy.
Back here we call this a bechamelle sauce (but use butter instead of fat or grease). We prepare the flour with the butter then keep this paste in the refrigerator for further use also. I'm in Canada, Quebec
I do a version of nachos, themed on breakfast. I made waffle chips (nothing fancy, just eggos), drizzle on white gravy, chunk up some browned breakfast sausage, top with a couple gooey eggs, and a few slices of avocado.

Now that's a good looking southern gravy. I loved that you decided to make a little brown vs white gravy. Loved addition of sauteed onions. I wish more people would do that. I know you used bacon grease as your base, but I wouldn't have minded a little crumbled bacon as well. Nicely Done. Thanks for sharing. 😎.
I'm looking at putting this over potatoes and lutefisk. I think the onions and Garlic with some chopped up bacon would set it off. Thanks for the video.
If you want to add extra flavor cut back on the milk and add chicken broth. If you want to spice it up, dice a couple of jalapenos and saute them before you add in the flour, mui delicious.
Exactly how I make my gravy. But I don’t add onions. That might be good if using for a southern fried steak or chicken, but not for biscuits (my preference). Also pieces of sausage add an extra yum to it. Thanks!
I know this isn't about dutch ovens, but I've only been watching your videos since this last Christmas because I finally got a dutch oven, and I've watched so many of your videos since then, I though I was subscribed because RUclips keeps putting your videos in my notifications. I realized I'm not subscribed, so I just did, lol. I already love cooking with cast iron, and I'm so excited to try my new dutch oven.

The classic gravy meal in my opinion, is country fried steak, Southern gravy, and mashed potatoes and/or biscuits....

My grandma and mom made it the exact same way . 1 to 2 tbsp.salted butter add cooked bacon ...my kids LOVE it!!!
