I have been looking for years to find this gravy. First time I had eaten it I was in boot camp training for the army. I took a chance on something I was told was gravy. And put it on my mashed taters. I can whole heartedly tell you. This gravy is absolutely delicious! Thank you for this video Ma'am. From one great Army Veteran from the State Of West By God Virginia! We HillBilly folk call it this. Because Who else by God Himself Could Make A Place So Beautiful!
My mama made her gravy with bacon grease and evaporated milk and added water during cooking. She got her gravy almost the same color. She made homemade buttermilk biscuits.This was called breakfast gravy. At dinner gravy was made the same way but with corn mill not flour and eat with cornbread. Both great. I miss her so much, grew up next to my grandparents what a privilege.

My mom use to make this gravy over white rice for us when we were having hard times. She passed away in 09 and I've been wanting some of it so bad. So here I am at 6 in the morning on a Sunday laying in bed about to get up and go make gravy 🤣

That scraping sound is one of the best sounds in the world! If you hear that sound, you know something delicious is being made! My mamaw always used a spoon, she also added the evaporated milk in then after it mixed and got to the color she liked, she then added water. It is by far the best gravy ever!

@@donniev8181 Yes, but it is good! I was skeptical at first, But was shocked at how good it was. I used a mixture of half butter, half olive oil, because I didn't want the butter to burn. make sure to brown the flour oil mixture real good, or it won't be good. The secret is browning the roux,( the oil and flour mixture). No matter what you use.
@@donniev8181 You could also use your grandmother's recipe, mix half shortening and bacon grease, or, I've done this, half bacon grease, half butter or olive oil.

The browner the flour gets the less the thickening power is. A brown roux tastes better, but the sauce will be thinner and need longer cooking time after the liquid is added or less liquid. Oil separation as the gravy cools is a sign of too much grease to flour in the roux, which results in an imperfect suspension, but it will still taste fine!
Interesting! I had no idea that that was how gravy was made: roux with milk. I never would have imagined there was milk in it. I've never heard of 'milk gravy' but I guess it's good. I know Southerners have a lot of gravy.

Never would I take store bought light bread over biscuits! Mom nearly always used evaporated milk and water for gravy, even though we had milk from cows on the place. The slight caramel flavor was always loved by folks even though they couldn't pick out the ingredient that provided the taste.
