Apam Balik~Pancakes Filled With Peanuts & Sugar

  • This is a thicker version of Apam Balik or pancakes filled with peanuts and sugar. The edges of the pancakes are crispy, and the middle is softer. These street-snacks are popular in Malaysia and Singapore.

    1 1/4 Cups All-Purpose Flour
    1/2 tsp Baking Soda
    1/2 tsp Instant Yeast
    1 Large Egg
    2 Tbsp Cane Sugar
    1 Cup Water
    Filling
    2 Cups Roasted Peanuts, coarsely ground
    1/2 Cup Cane Sugar

    Thank you for the recipes I have try it many times but I could not get the thickness of the apam balik that I wanted, So I used breadflour , yeast and bicabonate soda leave it for 2-3 hrs not to let it turn sour .It turn out very well. So happy that I could not sleep the whole night.Because My hubby though I bought it from the pasar malam.

    Thank you for sharing, I am making it, the batter is left to proof now. In Penang, we add in some oil to the batter so that it will be more crispier, a Chef said. And will pour some melted Planta before sprinkle the filling.

    hi loved looking at this recipe! i was wondering a) the heat you put your flame on whilst you cooked i.e: high heat, medium heat, high medium heat, etc. i've tried making apam balik with another recipe and it turned light and dark in different places- b) any tips on how to make it fully brown like yours?

      Selvarani Krishnasamy Thanks for your support. Unfortunately you need egg for this recipe. I read somewhere you can replace egg with banana puree, if you don't mind the taste. (1/4 cup banana puree=1 egg) or 1 Tbsp of soy flour + 3 Tbsp water, mix well= 1 egg. Hope this help..xx

    Hi Flavours of Asia, just to make sure before I do it, is it Baking Soda or Baking Powder that needs to be mixed with the All Purpose Flour?
    Also, can a few drops of Essence of Vanilla or Pandan be added to the batter so that it gives a distinct flavor?

      Hi there, there's no baking powder in the recipe, just the baking soda. You can add any flavoring of your choice, I'm sure it will taste okay but not the original Apam Balik. Thanks.

      This recipe makes 4 pieces , about 5 to 6 inches in diameter.

    Hi ma'm, can you upload APAM MAKING, apam with no filling but center pop up like a small ball, a little firmer than the outer layer, whereby it is soft.
    Childhood delicious snack. In singapore still able to find that, miss that snack a lot.

      You can try, but it will taste diff...or you can use castor or granulated sugar?

      Nageswary Vanham This pancake is best consume warm or at room temperature. I'm not sure they will still taste good after an hour.

    hi , how much is ur 1 1/4cup all purpose flour = g? cane sugar = g? grounded peanuts = g? i don know if urs conversion is japan or US..thank you. appreciate becos *jpan flour 1cup=110g....sugar 1cup=180g...can u please let me know ur weigh in grams...aprreciate very much...

      1 cup flour about 120 grams. Sugar and peanut, adjust accordingly.

      Summer Gan You can add a dollop of butter inside. I've seen some hawker, they liked to brushed the butter on the outside too, I personally think it's not necessary.

      di malaysia ada "Apam Balik", ada "Murtabak". kedua itu adalah makanan yang berlainan. :)

      In malaysia, Murtabak is chicken or beef mix with special ingredient and wrap with roti canai doh.. Most likely indian style cook.. We can eat just murtabak itself alone or dip into vinegar onions mixture..

      Apam balik in other hands, just like the video.. We malaysian prefer the simplest apam balik; only sweet corn, peanuts, sugar as a topping.. Sometimes we put some choc rice or red bean.. But the original recipes is the best!

      Egg is more of a binder than adding flavor. It keeps the whole thing together so that they don't break apart. Try using potato starch.
