Apam Balik | Malaysian Peanut Pancake | Malaysia Snack | My Way - Simple Super Delicious Recipe

Apam balik is a snack that you can find anywhere in Malaysia. especially in the night market. (We call it pasar malam in Malaysian.) This apam balik (peanut pancake) is full of flavors such as sugar, cream-style sweet corn, ground peanuts, and butter. These days, you can buy this pancake with other fillings, but it is traditionally served with peanuts, sweet corn, and sugar. It is divine. Soft inside and crunchy outside, you eat it when it is warm.
This recipe is my own, and the rice flour gives the pancake skin a crunchy texture.
Simple ingredients:
Batter:
¾ cup - plain flour
1/2 cup - rice flour
50g - sugar
1/4tsp - baking soda
1/2tsp - yeast
140g - warm water or warm milk
1 egg
1tsp - vanilla extract
Butter as needed.
Filling:
cream-style sweet corn
ground peanuts
sugar
butter
