Mexican Chicken and Cheese Quesadilla -- Crock Pot to Griddle Recipe

- These chicken quesadillas on the griddle are a copycat of my daughters’ favorite Mexican chicken quesadillas from a local restaurant. The stewed Mexican chicken in these quesadillas is absolutely fantastic - and much different than what you get at most Mexican restaurants, so I tried to replicate that in the Crock Pot. Combine the awesome shredded Mexican chicken with the perfect quesadilla cheese and some delicious homemade flour tortillas, and you’ve got one of the best chicken quesadillas that we’ve ever made on the griddle!
For the Crock Pot Mexican Chicken:
INGREDIENTS-
- 3 lbs boneless skinless chicken breasts
- 1/4 cup carrot, small diced
- 1/3 cup bell pepper, small diced
- 3/4 cup onion, small diced
- 2 dried guajillo chiles, seeds removed
- 1 dried ancho chile, seeds removed
- 2 cloves garlic, minced
- 2 chipotles in adobo (from can)
- 1/2 cup salsa
- 2/3 cup red enchilada sauce
INSTRUCTIONS-
- Rehydrate dried peppers in hot water for about 15 minutes, or until softened.
- Add rehydrated peppers, garlic, chipotles in adobo, and enchilada sauce to the cup of a blender, and blend until smooth.
- Put the chicken breasts in the Crock Pot. Pour the blended pepper mixture over top of the chicken. Add the diced bell peppers, onions, carrots, and salsa to the Crock Pot. Cook on high 3-4 hours, until chicken is cooked through.
- When chicken is cooked, remove chicken from crock pot and set aside.
- Add the remaining sauce from the Crock Pot to a large skillet. Reduce over medium heat until sauce has thickened.
- While sauce is reducing, shred chicken. Add the shredded chicken to the reduced sauce.

Great recipe--you guys seriously have the best! You can also use Rick Bayless’s Barbacoa packaged mix if you are short on time! I add a can of mild rotel, one chopped onion, the sauce mix and the chicken into the crock for 3 hours on high. You could make tacos or quesadillas! His mix is pretty clean ingredients! My husband has a meat allergy so chicken is allergy we can do-but this is pretty awesome!

Nice vid. Looks way better than restaurant food. Think about getting the Vevor electric griddle so you can cook indoors your wife doesn't freeze. Like the crockpot addition. The two most overpriced items, if not more, in a TexMex restaurant are quesadillas and fajitas. Keep up the good content.

I feel ya on the crappy weather and the picky eaters 😂 17 bucks for a quesadilla is wild. I like the somewhat irregular tortillas each one is special like a snowflake haha these looked amazingly flavorful. Glad the heat got balanced out so everyone would eat. Great cook!

I use a tortilla press all the time with flour ... The whole thing you got to pay attention to is temperature if it's cold they're going to snap back so I keep my dough in a warm oven in between rolling

We have made that "shredded crockpot chicken" for years!!! It's so good and versatile for all kinds of things! We use it to make nachos, quesadillas, burrito bowls, etc. It's a great little recipe to have for busy week nights. I just put all the ingredients in the crockpot before leaving for work, set the timer for 4 hours and then it will switch to warm feature to keep it fresh until we get home from work. Thanks for sharing your rendition!

I was thinking right after the first time you said the press wouldn’t work, maybe not all the way but for a good 75%. I need to try those. Chicken cooked in a crock pot is a gamble so I may throw it all in a bag and sous vide. Great recipe!

Dairy products cut the spicy impact of the peppers.
The steeping water is a good base for home made enchilada sauce, so don't throw it out. Or, make albondigas soup with it.
Another recipe you might like to try is what I call Hawaiian burgers the recipe consist of hamburger meat, crushed pineapple, whole can jalapeño pepper, one large onion and that was 3 pounds of burger makes about nine big patties and wrap your patty in the thin cheap bacon. It is awesome.

What I learned from researching how to make the best flour tortillas from Mexican professional tortilla makers (Stefanie from Views on the Road and a deep dive by Ethan Chebowski). The weight of flour in grams, 25% fat (your choice high quality lard, bacon grease, butter), ~50% hydration (water). Knead until smooth, rest dough minimum 30 minutes, portion balls, rest another 30 minutes, roll tortillas and cook on hot surface (comal, cast iron skillet or griddle)
Looks fantastic! I got a griddle press similar to yours, corn tortillas were fantastic, flour ones were bland and tasteless, I used everyday flour, some say to use like a bread flour. I used butter also in mine. What kind of flour did you use?
