  • These pineapple pork tacos are similar to pork al pastor tacos, except made on the griddle! We started out with a fantasic homemade pork marinade with dried peppers, pineapple juice, and Mexican spices, then we cooked the cubed pork butt on the griddle. And of course, you know we had to make our own homemade corn tortillas on the griddle too!

    One of my favorite food groups. I laughed at the comment "restaurant quality food on your back porch" I have always said that when restaurants could serve food as good as what I eat at home I'd go out more. I have rarely found restaurant food to be even close.

    Can’t wait to see your TMG Santa Maria! Made your honey mustard chicken and fam absolutely loved it. I used spicy brown mustard. Made the honey mustard a bit tart on its own but mellowed out over the chicken. Huge fan, even if you are Navy. Go Army!

    Again, delicious looking food! Thanks for being the griddling professor! Something as simple as scrambled eggs, I’ve learned since watching you “scrambled” doesn’t mean destroyed and don’t cook them completely done, they will finish on the plate. (Cooking for over 60 yrs).

    I'm very pleased with you and wife on making this Mexican dish.
    I'm not Mexican but I love their culture and of course the tacos.
    I do agree that adding crema and guacamole will add another taste.

    Oh man, I swear I could smell it as you were serving it out! Awesome, Neal! I think my wife's reaction as she was snooping over my shoulder was, "What are you - Oh, that looks good!" and I don't think she was talking about your spattered apron.
    Griddling is always better in freezing temperatures, don't ya know, especially with a good 15 mph wind in your face!
    Thanks for the lead on the press too. We have an aluminum one that just flexes when you press it - total junk. My wife wants a wooden one though. The only downside is that she wants me to make it for her! I told her that I can't find any food-grade wood! I don't think she believed me!

    Al pastor is a favorite, however 😮Just a tip, You have to throw the pineapple into the marinade, allow to marinade with pork 2-3 hours before cooking 🤌 cook it together, it’s nice. The pineapple absorbes the marinade well.

    I love al pastor tacos. You can absolutely use chicken with this marinade. In fact, there is a chain in South Texas called Taco Palenque that first introduced me to chicken al pastor tacos. I'm thinking that I might make a large batch of the marinade and keep it in the freezer. After all, that is where the most work takes place. Also, we visited Cozumel recently and attended a Mayan cooking class. A Mayan tortilla is made with the same technique but left thicker. They also showed that if you lay it down gently it cooks evenly and, after the flip, you press the spatula lightly on the top of the tortilla and then lift quickly and the tortilla puffs up like a pita, making it possible to stuff it with some refried beans. It was incredible. I haven't tried making tortillas since then but I will soon. Thanks for this technique. I will be using it.

    Ahh Chee Oh Tay :) Looks great folks, I made some of these (little different execution) for my gardeners and they really loved them. I've made Al Pastor style pork many times, and I eventually learned I like a little less Annato seed (Achiote) in my marinade. Have yet to make real homemade corn tortillas, so I'm going to need to try doing that soon. I have several Mexican Markets (Carnicria's) near me so I can pick up some pretty good corn masa and I'm going to need to do that soon. Nice job as always!

    Dude this is spectacular! I suppose I'm fortunate to live in NYC when it comes to sourcing ingredients. It's rare I can't find something. The marinade looks amazing, and had to be perfect for the pork, especially with grilled pineapple. I absolutely love radishes as well, and snack on them with some soft butter (French thing). Anyway, these look absolutely amazing, and would have to be in the top 3 taco recipes I can think of! Fantastic job sir!

    Good job! You may want to mention that if you use fresh pineapple juice and marinate for longer than 15 minutes or so, your meat will turn to mush because of the bromelain. (No need to ask me how I know…). When pineapple is cooked (as in canned) the bromelain enzyme is largely deactivated, and thus rather than mushy meat, you get nice flavor. And since you are using canned juice, might as well use the canned pineapple as well, since it is grilled anyway.

    Those tacos look amazing Neal! I definitely need to get a tortilla press. Looks so easy to make those tortillas the way you did. I knew when you were responding on another post telling me you were going to do this that it would be nothing short of incredible. I'm wondering if parchment paper would work when pressing out the tortillas. Did you try that already? The Ziploc bag is a good idea also but sometimes I'm short of them and I have tons of parchment paper. Excellent video man!

      Most legit Mexican restaurants usually marinate their radishes in something top secret, so I might have to agree with you on this point. Every time I go to my taco place, I grab a few of their radishes out of the condiment bar and I have no idea whey they have soaked in, but it's good and the radishes are delicious. I can't replicate it...

    Thank you for work on this channel. It is appreciated. Question: What is your opinion on those silicon mats, like Griddle Buddy or Grydill Mat? Will covering the griddle with aluminum foil do the same thing? Will aluminum foil promote rust? I ask because I worry about mice getting on the griddle surface. I have a lid and a cover for my griddle, but still worry about rodents. Would appreciate your thoughts. PS I asked the same question to Johnny Brunet. He also has a great channel.

      Regardless of any answers....do NOT use aluminum foil......
      Do silicone mats help..absolutely...but dont let those be your only protection. although they fit snug...if you get the right size....water and debris will still get in all around the sides. since no air can flow...that will aslo help create more problems...
