I make a broccoli chicken Alfredo but i use skim milk, greek yogurt, shredded or ground Parmesan and a slice of baby Swiss cheese. I use corn starch to thicken the sauce ( of course seasonings, salt, pepper, garlic powder and onion powder) The greek yogurt makes it super creamy and the parm and swiss cheeses make it very Alfredo-y. Im sure you can sub out skim with the almond milk. Im personally not a fan of almond milk. But i use a small head of broccoli, 2 chicken breasts, par roasted for 17 mins. Then I i shredd the chicken, break up thr broccoli into florets then pour the sauce over and bake it @350 for 20 minutes. Perfect 😋

I love the almond milk blended with alfredo! All veggies are carbs but not all veggies are created the same in carb quality. There are complex carbs and simple carbs, and folks interested in eating lifestyle changes to promote weight loss would benefit by educating themselves on the difference, as well as the differences in our body's digestive process for complex vs simple carbs, and how our body then uses them for fuel vs fat storage.

OMG! I literally just watched your RUclips video on Thursday and cooked this on Saturday. I'm so happy I remembered I had some broccoli in the freezer. Very delicious! And so easy to make. I also added some heavy cream! This will be in heavy rotation for my 2024 meal planning routine.
This was SO delicious! I added cooked bean sprouts to the dish and it added an amazing crunch and almost felt like a noodle substitute. The bean sprouts didn't alter the carbs too much to where it's still considered low carb. Thanks for sharing this!

I had a random thought and was thinkn that maybe blended down cottage cheese or plain yogurt into the alfredo sauce instead of milk and then portion it into containers for the next few days with a side of fruit or one of ur desserts recipes. I only just thought this up from when i recently saw ur cottage cheese pizza crust and loved it. Spinach noodles is another option for those interested to add pasta. Veggie pasta. Whether tri-colored rotini or any other veggies pasta. ❤
Bertolli is the cleanest brand of Alfredo sauce that I can find. I add more fresh parm to it. Delish. I use it on zoodles. I do make my own sauce when I have time but often I don’t want to take the time.
I just recently found you on You Tube and I really love watching you and all of your recipes. I just tried your Chicken Alfredo recipe and used Parmesan cheese and loved it. For sure, this will be one I will be making again but the next time I will try with Mozzarella cheese. I see a few more other recipes I am excited to try. Great recipe! I also add sliced mushrooms which can be a substitute for the pasta. A trick with the chewing experience. Also other vegies like sliced onions, red pepper and zucchini. This is a fantastic recipe. I just made it. It's so delicious. Mayra, you may want to include more information in your blog recipe. I watched the video a few days ago, but I made the recipe from a printout on your blog. On the blog recipe, it doesn't say what size jar of sauce to use, what size casserole dish, or how many servings the recipe makes. From re-watching the video, I see that it is a 15 oz. jar and that I should have used a smaller casserole dish, although it did come out fine anyway. Also, is the amount of broccoli correct on the blog recipe? I used the whole 12 oz. bag that you showed in the video, but the recipe said 1.5 cups, which isn't much. In my larger 10x16 dish it took 25-30 minutes rather than 15. I'm not sure why, as it was more spread out than yours, but that's how long it took. All in all, it was so yummy, and I'll try more of your recipes. Thanks for all your great recipes.

@@MoMo-im5jc I ended up using only 1 cup of sauce to a 1/2 cup of almond milk and it was pretty runny. It tasted great but I think next time I will end up only using 1/4 cup of almond milk added to 1 cup of sauce so that it remains creamier. I used the same jarred sauce she used in the video.

I just made this for dinner. I used 2% milk since I didn’t have almond milk. I boiled pasta on the side for the kids. They loved it. I loved it. Do NOT skip adding milk to the Alfredo sauce. It’s a big difference.

For a lower carb/lower calorie, Alfedo sauce, blend 1.5 cups of cottage cheese with 0.5 cups of Parmigiano Regiano or Pecorino Romano and 0.5 cups milk of your choice. Naturally, you'll want full fat cottage cheese if you're Keto/ Carnivore and low fat or non fat cottage cheese. If you are low calorie.
I have actually made this several times. And it is delicious. We also do it with spaghetti squash.I have also been doing the almond milk hack for years & she is right it is still creamy. 😋

Many of the jarred Alfredo sauces are fairly low carb and fairly clean. Read your labels thoroughly, some have added starches.

I had to circle the block. This. Is. My. Favorite. Meal prep. I've made this at least 4x. And yes, it is crazy easy. I pick up to rotisserie chicken already pulled and a bag of fresh broccoli a jar of alfredo sauce shredded cheese and Unsweetened almond milk. Season to taste. Favorite ❤❤❤
AMAZING recipe! Love chicken Alfredo from Olive Garden, but can’t eat the pasta, 😢 I’ve made this similar recipe with “Heart of Palm” by Palimi, using the Linguine as a pasta replacement with broccoli!🥰 it was delicious, will make it again

You can pan sear it. That’s what I usually do because I don’t have an air fryer either.
