As a rule I do not like potatoes in any way made but when I visited the Liguria region of Italy I had this dish and it slightly converted me. I may try it for my “everything Italian” daughter. I suppose we should watch the film too.
My aunt's in laws were from Genoa. She made this dish. She softened cream cheese and mashed it up with the pesto and hot pasta water. It was delish

Haha I left some walnuts toasting in the oven too long last night, for topping a chocolate ganache on chocolate zucchini cake!😅 I was gonna toss them, but my partner tried one and exclaimed: MMM! They’re good! Lol they kinda taste like popcorn!😂😂 Not necessarily what you wanna hear about walnuts, but I put them on the cake anyway, and overall, not bad! And nice and crispy! But for pesto, no burnt nuts, for sure.
