You can have your trenette al pesto with green beans and potatoes and without them. Both of them are two authentic Genoese recipes: if you add green beans and potatoes to trenette al pesto, the dish will be called "trenette al pesto avvantaggiate". Both dishes are equally popular and delicious. Saluti da Genova e complimenti per la ricetta eseguita alla perfezione.
Yes, it's a good recipe, though I would have liked to see her use also some pecorino sardo and temper the pesto with a dollop of ricotta or yogurt (for lack of prescinseua)
Eva I love you....this is THE BEST pesto ever. I've made it a lot in the past but always in a blender....NEVER AGAIN. Using a mortar and pestle is the only way to go. The taste is from the earth, not a machine.OMG, I could sit there and eat this with a spoon, it's so good. I can't believe what a difference in flavour when you do it this way. Harper is such a lucky guy! Thank you so much for sharing your knowledge with us.

I made something similar to this on Sunday. It was called Trofie Al Pesto Genovese. I made the Trofie from scratch. It took forever.

However, what do You recommend as a good olive oil brand do you use? I keep trying to find a "go to" one, but the ones I've tried, both $-$$$, have tasted strong and bitter, off setting the dish.🤷♀️ Thank you in advance for your help!😊💚🤍❤

You would be very disappointed of Italy today. We are living in a dictatorship with crazy government and craziest rules invented by brainless, evil beaurocrats. Stay where you are and try the italian receipts from what you have at hand. Do not come to Italy. For your safety.

A small tip, try to find out on websites where to go trying to avoid turistic restaurants.
As an Italian, I recognize that this is our main problem, there is such a high number of turists (especially in cities like Rome or Florence or Venice) that sometimes even us Italians make mistakes and end up in a tourist trap! 😂

One time I found my American friend doing pesto sauce for MY pasta but he put avocado in it and I developed fluent Italian to rant at him, completed with the hand gestures

On a side note to your lovely joke. Avocados are bound to become Public Enemy Nr. 1 (and curiously enough, Douglas Adams had predicted it). They are causing droughts halfway around the world, from Mexico to Portugal and Sicily. There's hardly another crop that compares. Wherever you see a lake or river that recently dried out, if you search out the name of that area + avocado, you will find groves near it. Horrific. The next time someone tells you that avocados are "cruelty free", tell them to think again.

I admit with shame that I often try to 'save time' by making Pesto in a food processor (eyes downcast in shame). Even worse, I've avoided aking the real trenette al pesto by omitting the potatoes, b/c I object to the combination of potatoes and pasta--carbs X 2--(I'm non-Keto, but still...). But Eva, who is a BORN teacher, has opened my eyes. REAL Italians know that textures or 'mouthfeel' is SO important in cooking. from now on I will dust off my lovely big, Indian mortar amd use it religiously to make Pesto! Eva, you are A SAINT!!!!

Using a stone mortar and hardwood pestle is best.
Look on the internet for "mortaio in marmo di Carrara"
Mortar in Carrara marble, it is the original one (I'm Italian from Carrara, I know it) 😁
One of the things that impresses me most about Italian cuisine is how detailed and acute it is... things like "the cream of the garlic (or basil) or the detail about removing the 'germ' of garlic" for making pesto (which I also saw on a Michelin starred chef's description of pesto) tells me FAR more than the average recipe.
My friend makes pasta in a blender and it comes out oily. In general, I find people use too much oil for pesto! They don’t know how to use pasta water to finish the sauce! Thank you for showing the right way! 😋

Eva..Thank you for a concise step by step recipe. Though I never added the potatoes or beans to the dish, I will try it. Growing up in a Greek/Italian household my Mom would please my Poppa with the Feta substitute for the Parmesan, and some diffused lemon after. I grew up with both the classical version and the altered Greek one. I enjoy both. Bravo Pasta Grammar!

Thank you! My mother does it also but since most of us don't like green beans she switch them with lentil. Another recipe she tried and we love, it is to use instead of the pesto just raw filtered tomato juice with basilica and olive oil and it is just fantastic!

I tried this today, as best I could with the ingredients on hand. Even having to substitute a couple things, it tasted pretty darn good.
