- How to Shop Like an Italian | Shopping Tips for Authentic Italian Cooking
Authentic Italian food is based upon simplicity, but simplicity can produce challenges of its own. When a dish relies on just a few elements, the quality of those ingredients becomes paramount!
In order to help aspiring Italian food gourmands, Eva is here today to share some tips and tricks for how to shop like an Italian: from selecting the right pasta to identifying a promising bottle of wine!

EVA'S "PASTA ALLA MONTOVANA CON RICOTTA" RECIPE
For this recipe, you will need:
- Penne, penne lisce, rigatoni or fusilli pasta (to serve)
- 2 cups cubed butternut squash
- 1/2 onion, diced
- 1 cup ricotta cheese
- Parmigiano-Reggiano cheese
- Olive oil
- Nutmeg
- Amaretti cookies (optional): amzn.to/3leJEBQ
- Salt
- Fresh black pepper
In a saucepan, bring 3-4 tbsp olive oil up to medium temp. Add the diced onion and sautèe for about 3 minutes, until the onion becomes slightly transparent and tender. Add the cubed squash and a splash of warm water. Salt and pepper to taste, then partially cover and cook for approximately 10-15 minutes, or until the squash has softened. If necessary, add more water as it cooks if the moisture has completely evaporated before the squash is ready. Turn off the heat.
Bring a large pot of water to boil. Salt liberally (two small handfuls is a good start) and add pasta. Cook according to directions provided.
Meanwhile, on a large plate or platter, combine ricotta cheese with a generous grating of Parmigiano cheese and a sprinkle of ground nutmeg. When the pasta is nearly done, add about 1 oz. of the pasta water into the ricotta mixture and stir all together.
Using a slotted spoon, ladle the cooked pasta into the squash saucepan and stir for a minute over medium heat. Transfer the pasta onto the ricotta platter and stir all together. Top with some crumbled Amaretti cookies (optional).

My Italian friend said to me once that no matter how bad things got for him, he would always buy the best cheese and bread he could possibly afford. I've never forgotten that comment and try to live by it!
You can make your own ricotta and mozzarella cheeses without alot of effort. There are recipes for these cheeses on youtube. But the hard Italian cheeses are more time consuming.
I realize it's kinda randomly asking but does anybody know a good place to watch newly released series online?
This is my view on all foods. I grew up in an indebted house, which meant that we always had own brand foods.
Some foods it really doesn’t matter if you go for the cheaper option, especially in the case of fruit and veg, but with other foods, brands are better. Things like cheese and bread are cheap for a reason and it is often clear in the taste of lower price items.
It is a good exercise to test both branded and own brand options to see what you find to be best.
It's so important to at least splurge on the good quality basics. The food turns out much more nutritious, rich, and filling, so you consume less and are satiated. Better yet, if you learn to make your own bread and cheeses, you save money in the end. For example, with one $6 bag of good quality bread flour, I can make about 10-11 loaves of amazing ciabatta bread that I would pay $4-$5 each for at a bakery for bread of a similar quality. After two loaves, the ingredients pay for themselves! Same thing with pasta, cheese, tomato sauce, and other cooking staples.

How did they meet?
Totally! After all, eating Italian is the art of tasting food on the tip of your tongue, savour it, cherish it. Wash it down with a small sip of wine, to cleanse the tastebuds, and prepare them for the next forkful, every cycle bringing alternate, but complementary, explosions of flavour. As opposed to bingeing food and alcohol, all together, shovel them down your throat from a XXL wheelbarrow of a portion and a one gallon plastic bottle. 😉
After binge watching your episodes for almost two hours, a lightbulb went on...I realized that food made with simple, quality ingredients tastes better than over complicated recipes with subpar “processed” ingredients. I get it now! Eva should write a cookbook! I’d be the first in line to buy it 😊

Get the best olive oil, go for the high fat cheeses.... Use fresh herbs, and resource the best ricotta
@@SorrentoShore I think many people don't understand that there is a difference between simple and simplistic. Ingredients like white sugar, table salt etc. are really just one flavour, something like a good olive oil is complex on its own. Many people will just eat a good cheese with some wine, because it's so complex and enjoyable. When you combine just a few good ingredients, you get an explosion of hundreds of flavours and aromas.
Can't believe La Molisana pasta is cheaper than Barilla's .
That must be only marketing, because as far as I know De Cecco or La Molisana are way better than Barilla, and more expensive. (at least here in Venice).

Barilla is the #1 brand in Italy but that doesn't make it the best quality. La Molisana, De Cecco De Verde, Giuseppe Cocco are all much better quality and mainly use 100% durum wheat from Italy. Price is not always king 😎

My great grandmother (from my mother's family) was from Mantua and as you know, Eva, in Mantua they are very proud of their "
Turtèi cun la söca" (written in Mantuan dialect, "tortelli di zucca" in Italian, for non-Italians they are a pasta similar to ravioli filled with squash and amaretti, the same ingredients that Eva used in this video). Unfortunately I've never liked them, I'm the black sheep of the family, I don't like the sweet and salty tastes together when I eat pasta. However, my compliments for you are always here, always glad to see someone bring up the name of Italian cuisine in the world :)

In Germany „De Cecco“ pasta is more expensive than Molisana. And there’s pasta for more than 4€. So I don't understand why I should buy 4€ pasta if I can buy 1,29€ Molisana 😅 Plus: Molisana is even cheaper than Barilla

UPDATE: that molisana pasta really is... better. i'm not sure how to explain it. it's more... toothsome. it's got more substance? i dunno. but i do know that it is head and shoulders above barilla and eva is right, barilla is trash, by comparison. it's just about like having fresh made pasta without having to go through all the work.

In fact here in Italy Molisana is more expensive than Barilla (almost double the price...) and it's fair. I don't know why Barilla is so overpriced in USA! Avoid it absolutely. (Italian average prices: Barilla 0.69€ for 1/2kg pack, Molisana about 1,09€ for the same 1/2kg pack)
@@BICIeCOMPUTERconGabriele that's about what barilla costs here in the US. Molisana is normally bout .20 usd more than barilla. Totally worth it in my opinion. I will never buy barilla again
Molisana was the standard on our UK home. My folks were from near Salerna so it also a southern thing. It's best best because 'non scuoce'. It's bulks up evenly, and is denser and thicker than most, requiring that longer cooking time, and it stays whole even if it sits around for a while, not breakibg up too much.
La Molinsana is hands down the best pasta I've ever tried. Not just the texture but in taste. I could, and sometimes do, just eat a few forkfuls with nothing on it at all. It's amazing

I live in Maine as well! I moved here 4 years ago with my husband and we love it. However the selections are so limited up where we live. It’s great to see someone else who lives in Maine making delicious food!

Limited selection of food choices? Well, it's difficult to have everything and if you have so much local, fresh food at farmer's markets (as implied in the video), I'm sure you will be bringing your own skills to the table & will be just fine! My heritage is Italian. You must go to Micucci’s Italian Market on India Street in Portland for anything Italian! It is a must visit!
When I was a child we only had penne lisce as far as I remember, it may have been the only type sold in Australia I don't know but I have a soft spot for them even if they don't hold the sauce as well as rigate. We also always put a knob of butter on the bottom of the plate before putting the pasta whereas for some reason that habit stopped when I got older and I think it's the memory of the butter mixed with the tomato sauce that is responsible for my attachment to penne lisce. Funnily enough one Australian cooking habit I've always liked is baked pumpkin (it seems to be very much an Australian thing as Americans don't seem to do it and I'm not sure the British are much into it either). We didn't have it at home as it was a foreign idea to my father but unlike all other Italian pasta I've eaten I'm not mad about pumpkin pasta, at least not pumpkin ravioli. I might give Eva's dish a try though. Thank you for the explanation of why bronze-cut is better. I can see that it is obviously considered better but I didn't know why.

Complimenti! That looks delicious - I will cook that today. It's true - I am second generation Italian background born in Australia. My mother was born in Palmi RC and I was brought up the same way as Eva. Italians treasure their food and we always select the best produce whenever possible to make our cuisine. Food is not only our life but as my Zia taught me it is also our medicine.

I'm shopping alone for 20+ years / I spend A LOT of time checking the labels because American products are really low quality and so deceptive. I have to sift through all the BS on the label, takes me forever, and we CANNOT settle for cut rate products! We WILL find what we need or we will just not eat! Its that important for us. And we talk tirelessly of food while Americans start to look soooo bored.. Yes in a way, our life does revolve around food. If you are not a foodie, don't marry an Italian from the south. Totally made my day. I used to cook fresh all the time...but the last few years have seen 6 moves and lots of crazy. This was such a good video! I taught English in Italy and their food is so good because their ingredients are simply the best in the world. It’s hard trying to get those quality ingredients here in the USA so this was helpful 🙏🏻

My tip is to look for wines made from a single grape variety. In this case “falanghina” is an ancient grape variety. Excellent choice Eva 👍
As with the olive oil, if you like the bottle it's not too bad for basic, but yeah really, might as well buy the plastic jug!

I'm from Tel Aviv and I can't wait trying this receipe with our local "chestnut pumpkin", Galilian olive oil, riccotta or urda from a local dairy, and, well, I'll still use Italian parmegiano or grana pedano (though I think this dish might also work with a dry Zfat cheese, but it will be a different direction).
And served with wine from our own Tulip winnery! Buying local is the best.

One of the major supermarket chains here in Australia started selling La Molisana back in March and it seems to be super popular because it now takes up a pretty big chunk of the pasta section. I've been using it ever since it came out. Specifically the ones we have here are the La Molisana Extra Di Lusso; which I believe is their extra premium grade of Pasta?

This video made me realise how much I don't know about authentic Italian ingredients. Squash is something I grew up disliking because of how my grandmother cooked it (boiled and bland), but I have the feeling I would love this recipe if I tried it. 💜

I appreciate your comments about various pasta brands. Perhaps you could do an episode on the different Italian pasta brands you can find in America especially emphasing the better brands. I also liked that you pointed out the cooking time - this is absolutely a rule of thumb when it comes to distinguishing between pastas. Trafilata al bronzo - explain this better.

Eva your brand commentaries in this episode could move you quickly into becoming what we call an infuencer. I don't know if that is intended since your focus is on the food...and the best chefs often avoid it. Still, I do appreciate knowing your secrets when I shop ~ they are golden! No more Barilla ~ too yellow!! On to bronze cut, long cooking pasta.
I feel u Eva. I can't shop at one place either. I just don't like roducts from the same store. Some stores have some good products and others have some other. So I hope around 2-3 stores before I have bought all my ingredients. Doesn't matter what cuisine it is. I have gone to a store just to buy one ingredient as small as chilly flakes. I’m Greek - my family always looks at the back of the olive oil bottle to see which countries the oil came from. If there are any other countries on the back other than Greece, it goes back on the shelf 😂

Also, I lived for two years in Greece and I have to say that there is low quality greek olive oil as well. To my taste, cretan olive oil is the best.

konstantine1211 Peloponese it is well known for the koroneiki oil in Kalamata, estimated as the best oil in Greece. But I have tried some koroneiki oil from Crete which was superior. Yet, this is just my experience 😉🙋🏻♂️

@@orlandoraw842 my friend these are jokes and memes nothing more. The best quality of pasta is 'liscia' and it is the most eaten in all Italy, especially in the south. The 'rigate' version of pasta is more found in the northern parts of Italy where the types of sauces are heavier and where the imperfectly cooked 'striped/rigata' pasta's starch can help emulsify certain dishes and sauces. While the meme can be funny, it doesnt represent Italy at all. For me the meme isnt even funny as it represents the clash between north and south italy. And what most likely what happened in real in that one or two supermakets in the north is that the stocks of penne lisce had been much bigger and peoples stocks at home of penne lisce was also full in Italy, producing momentarily the illusion exploited by the meme. I have family living in the north, center and in the south of Italy. One even owns a supermarket. Fact is the penne lisce are the most eaten, only the spaghetti can compete... and spaghetti are 'lisci' by definition

Problem with the olive oil is, that lots of "italian" olive oil is spanish and then packaged in italy and sold as italian olive oil. Best way to get authentic one is buy it from a reliable source or just get high quality spanish (or other) one, its also really good and usually cheaper :D
@Legio XXI Rapax for sure. I am lucky that my Nonna got some olive trees in italy and I get my oil from them :D. So no mixing in that one.

The reality is that more olive oil is consumed in Italy than is produced, so being the largest exporter of olive oil in the world, a part of "Italian" olive oil is not made with Italian olives.
Or buy high quality Greek that isnt fake.

Today sealed the deal only "Bronze cut" pasta for this family!! Now he wants go out and but a slab of Parmigiano-Reggiano and a hand grater!! He was waiting for more advice on the Ricotta cheese???
