Oh course you can, standard is just more convenient because many songs are arranged with it in mind and many teach with it in mind, but if you take the time to understand and not mindlessly learn shapes by heart it shouldn't be a disadvantage to start in a different tuning. A C major triad is CEG in any tuning, you know?
