*Making a Thicker, Sweeter Version*
If you prefer your Cuban Coffee closer in consistency to the kind served in paper cups in Miami, you'll have to increase the sugar content to around 1 - 1.5 TABLESPOONS per serving. ** What kind of coffee should I use? **
Cuban coffees are most traditional, but any medium-to-dark roast will do. Cuban coffee is sold at almost all grocery stores. Brands include Cafe Bustelo and Cafe Pilon, among others. These coffees are a bit finer in grind than I typically recommend for moka pots, which makes the next tip ESPECIALLY important:
** My Abuela tamps the coffee down. Why shouldn't I? **
This is a common mistake with modern moka pots. The instructions with most of today's moka pots specifically state not to tamp, and for good reason. Tamping makes it harder for the steam to rise through the grounds. This creates a build-up of pressure that modern, aluminum moka pots are not constructed to handle, putting you at risk of a blow-out. Using finely ground coffee (common with Cuban coffee brands) increases this risk since the smaller grinds mean more compaction, less air, and more pressure build-up. So it's especially important not to tamp.
** You're using decaf. What's wrong with you... **
Health issues dictate that I'm stuck drinking decaf for the foreseeable future. But you don't have too! Lucky you!
** You don't use enough sugar, or the wrong sugar. **
It's true, traditional Cuban Coffee can have as much as a full TABLESPOON of sugar per cup. Feel free to add more sugar if you like. For me, 1-2 teaspoons per serving provides a great balance that is still very sweet, but allows the coffee flavor to shine through. But in general, more sugar = thicker espuma. For the sugar type, I've used standard white sugar, but brown sugar or turbinado can be used as well.
** Don't add extra water to the coffee. **
I agree. But as I say in the video, this option is only for folks who can't stomach the full-strength stuff. It's not traditional.
** My Abuela says you're doing it wrong. **
Like any "traditional" recipe, there's many variations out there, and the makers of each one will always claim theirs as the most "authentic". And they may be right!
** Safety Advisory: **
Moka pots have been used in households worldwide for decades. But it is a pressure-based system, so it's important to read your manual and follow all safety instructions recommended by the manufacturer. Never leave a moka pot unattended on the heat.

I just made cafe cubano for the first time using this tutorial, and it came out wonderfully. Thanks for the simple, to-the-point video!
We do something really similar in southern Italy. The only difference is that we take the first coffe that comes out of the moka and mix with sugar, then leave the moka on the stove to allow all the coffe to be extracted. When the coffe is ready, we pour the coffee from the moka into espresso cups and then add the cream we made earlier directly in the cups. Same result, different techinique.
Imma try that one, seems better.

Cuban coffee is basically espresso
I remember when I first had this was in Cuba when my fiance and I visited his family. Just a sip and I already felt the caffeine kicking me. When I returned home, I drank a mug full of this and I wasn't able to sleep for 3 days!

I used to say that decaf was a cruel joke .... now that I am older, I cannot drink a pot of coffee a day because of my blood pressure. I have a cup of regular in the morning and after dinner, and drink decaf throughout the day.... because I genuinely enjoy a good cup of coffee.
I've tried Cuban Coffee only once in my life. I loved it then and if I were to have another cup again, I would make me feel great.

Appreciate your channel. Straight to the point, clear instructions, and no dillettante drama. That last alone is a welcome relief. No more "...18 grams espesso roast only per cup, med-fine, freshly ground, 65 grams of water pour-over." Sweet heaven, get a life. Will try this!
Postscript; Did use these instructions, THEY WORKED! Couldn't catch enough brew through the spout, so I spooned about 1 1/2tsp from the upper chamber (using 1TB sugar), and stirred the h___ out of it using a small rubber spatula. Smooth, creamy, lovely beige color. Think if I were making more than a 2-serv moka pot, I'd whip up the crema and put about 1tsp crema into each espresso cup and then pour in the coffee. More even distribution of espuma that way.
My mom was married to a cuban back in the 70s. Till this day she calls cuban coffee as something that gives you instant diabetes and makes your knees shake at the same time. 😁
She may have been referring to her husband.

For a moka pot, you want to put boiling water in first, and you also want to run cold water over the bottom chamber as soon as the coffee is done brewing.
Both these things minimize the time the beans spend heating up, or being hot, this very noticeably drops the bitterness of the final coffee

Also some good light roasted natural-processed Ethiopian coffee must be used. Rested exactly 10 days since roast date and ground at most 20 seconds before starting to brew.
Please also note that regular sugar must be replaced with organic brown sugar, and all the volumetric measurements converted to reproducible SI mass-based ones.

Thanks for showing me this as I'm new to all of it at 45 lol I live in Florida now and someone had me do a shot of Cuban coffee and I was racing to get all my errands and home chores done in a flash it seemed. I did two shots and I was speedy Gonzales after that and fell in love with this coffee. So I bought an inexpensive espresso machine and little espresso cups to make it all at home. I should have went for the metal pot you have. Oh well, thanks for sharing & I didn't notice what kind of coffee you were using cause I was so into how you were making it all. I 'm from south Florida and worked in a sugar refinery with some Cubanos who drank lots of coffee. They often shared it with me. They said they used sugar and lots of dark rum to sweeten their coffee as well . Ymmm...

The moka pot is my preferred method of making coffee, so I am no doubt going to make this. Great video. It has a very fun vibe.
That's great with the Moka brewer. You hit the nail on the head. When using an actual espresso maker that has a pump, the pump pushing water under high pressure releases the coffee's own crema or foam (espuma) and you don't have to whip the sugar because the foam is there already. It's all about the foam, crema or espuma...whichever you prefer to call it. I don't' use a Moka any more. Too much work. I live in Miami so I know. Great video. Thanks!

In Italy they take the whipped sugar and put it in the demitasse. Then they pour the brewed coffee over it but don’t stir it. You drink the coffee starting with the bitter notes at the top and progressively moving toward the sweetest final drops. I was taught this in Sicily when I dared to give a Cuban coffee making lesson to my Italian hosts explaining to them I had learned it from Cuban friends in Miami. They smiled and said “let us tell you how it’s really done”. I had no idea. The technique was similar but different, and the drinking experience was also quite novel and very pleasant. Very very cool.

For those having trouble getting espuma, as far as I've been told it may have something to do with the freshness of the coffee. After roasting, but especially after grinding a lot of the compounds that create the espuma start to oxidize and evaporate out. Really fresh coffee beans should create a foam all by themselves during brewing, whipping the first coffee to come out just helps create even more foam. So if you can't get a foam, maybe try with a new batch of freshly ground coffee beans.
Yet they're using a half empty tin of cafe bustelo, lol.

When i was a kid(7 or so) my mom showed me this technique. It was fun. The funny thing is that we are moldovans and im sure mom had no idea its cuban coffee style nor was she told about it. It was simply her idea (i asked her) 😁.

This is so similar to the filter coffee from Southern India. But instead of using an apparatus where the coffee decoction comes up, we use a thing that takes in hot water and slowly sends it through the coffee and out into a different chamber in the bottom
also we take it with milk where this appears to be enjoyed black

To make it authentic, you want to tamp down the grounds. If you’ve ever watched a Cuban make some coffee you know you fill it, mash it, fill it some more, then really mash it again and crush in every possible ground you can get in there. That’s why it’s so strong and tasty.
If you have a moka pot and press the coffee down you risk hurting yourself and the coffee maker when all that explodes. Moka pots were not built to sustain pressure to that amount, so that is highly discouraged. An espresso machine on the other hand is able to handle that pressure hence why you see them press down.

Thank you for this video! It was interesting to watch and read your post. I don't quite make it this way, but that's okay! My abuela taught me differently, that's all. I also use less water and less sugar because I prefer a darker, more bitter taste.
I also use brown sugar (imported from the Caribbean) but I will try it with white sugar as well! It could be interesting.
Also, it's important that you mentioned the tamping. Indeed, that should not be done. Both my mom and my abuela don't, not these days. Maybe back in the day, but as you say, it shouldn't be done now given the making of today's moka pots.
I can't believe people gave you grief for using the decaf. It's still Cuban coffee, so what's the problem here? People need to calm down and enjoy their cafecito and let others enjoy theirs as they like it, seriously!

The good old days in the 1960s when my aunt made cuban coffee which is also known as espresso coffee, when we went to my uncle's home in Sunnyside, Queens, NYC. She bought also cafe Bustelo.
