Actual process - Speared the fish, drove it from SoCal, cleaned / prepped it, extracted the egg sacks, salt cured them, marinated them, prepared other side dishes, then actually made the dish itself, plated it - all whilst filming

Oh mentaiko. I remember that stuff. My dad use to request it when he was alive. I useto hate preparing it because of where he was from (Hiroshima Prefecture) there is a certain way to serve it which involves a BBQ and it smelled so bad. That and sanma and saba. I'll never forget it. I'm so glad my mom never asks for that kinda stuff.
I read mny of the comments and they focus on you Taku but ive enjoyed BOTH of you and feel its your personality mix of honesty and love that makes your channel a favorite.

Great to see you utilizing the Roe, I’m American and love the roe cause I was around my grandparents a lot and they ate it. The newer generation doesn’t eat it like they used to years ago, but I still do and love it.

Whenever I see Taku cuts a fish, it's very elegant and satisfying.
I'd keep that box and the printing is a very good idea better than a mount and a great way to document your adventure's ,be like having art that your friends will love when they come over talk about conversation pieces.

Awesome video! Let me give some advice on scaling the fish... Scale it immediately on the boat when you catch it under sea water, which will keep the scales from flying everywhere, and then vaccumn seal it before you throw it on ice.

Another truly amazing video! Love how you use ALL the fish - roe, milt, liver, cheeks are my favorite parts of fish, and they usually wind up in the cleaning-table waste bins here in Homer, Alaska. The van-build is superb. Looking forward to following your drive up here to Alaska and your many interesting experiences in this big state. I would love to see you get out to Atka I. (in the Aleutians) or perhaps the Pribiliof Is. to interact with the native folks and compare recipes and harvesting techniques. Atka is a beautiful island, with a small, but very friendly village - I think you would both enjoy each other a lot. Lots of interesting wildlife, both marine and terrestrial, including introduced caribou, and a big volcano. You might also find the diving exceptional, but need to rent some cold-water equipment. Would also love to see you get to some to the coastal villages that still hunt whales and other sea mammals to compare with your Japanese traditions. Heck, you could spend at least two full years (or more) up here and have an amazing compilation of videos that would continue to generate income for decades! Oh, I LOVE the fish/kelp print - beautifully done.
We eat a lot of Shad and other roe on the East Coast and the traditional way to prepare it is to fry it up in bacon grease ....sprinkle with parsley..squeeze of lemon...and served with toast points...and of course a glass of white wine.
Can't wait till Jocelyn fills up that little fridge with fish!
Wow when I saw those egg sacs I thought the eggs would be the size of ikura. Turns out its almost exactly like mentaiko. Looks great! Also for those who dont like mentaiko because of its fishiness i recommend trying it with sesame oil. They go great together and taste great.
