Last time I was there during a rafting trip we stopped for lunch at a small glacier fed feeder stream… You could jump over the creek in the narrow places however the king salmon were running and they were as big as my leg in that little creek! Our most AWESOME state I do believe! Thanks for the flashback :-)

Taku, I have lived in Alaska since the '70s but I have to say the way you prepared the Dollie and Pink was the coolest method ever. Nice fillet work too on fish you've done for the first time. If you use wet brine you need to let the fish dry and form a pellicle. I think you'll be more impressed by the taste of the actual sokeye and some of the other species.

In my many years of living in south central Alaska they were commonly referred to as “stinky pinkies,” but when caught in the ocean or just returning to spawn they had a pleasant mild flavor and sound flaky texture. On another unrelated pink salmon note consider visiting “Humpies” restaurant in downtown Anchorage…always a fun establishment to hang out in for pleasant seafood and brews.
No-see-ems are the scourge of the earth! They are no joke in Alaska. Listening to you talk about them and the mosquitos, it was like I was transported back there, years ago and I could feel them trying to eat me! Lol

From all the Alaska videos by experts that I have seen, they act like there are salmon swimming stack like anchovies in the water. This may be only true for migration location where they are spawning. Bear country I can not imagine. I thought it was like lake Tahoe where you only see bears at late night at camp or something. Freaking crazy I don't think I'll last long there if I were to wonder off the trail like you guys have. If not the bears, It'll be them skeeters. See ya on the next one n show us the city life too.

Pinks are great smoked. They are good bbq'ed too, IF you bleed, clean and ice them really fast then cook them right away without freezing them. Otherwise they get really slimy and the meat gets mushy (I used to call them stinky pinkies). They seem to have a high oil content and a very mild flavor, so they have a great texture when smoked even though they are not as flavorful as other salmon. Nice episode!

Easy ID for pinks...long, oval spots on the tail. I caught my PB pink in 2021, in Washington state. It was 9lbs 2oz. I really enjoy them smoked and grilled. Reminder: If you lay those fillets skin-side down on a raised rack, and cover in rock salt, the meat will firm up quick (2 hours) and won't leave the meat salty. Works slick!
The Alaskans weren't lying about their mosquitoes. I can't think of many times I could actually see them on camera. Must be the size of houseflies. Jocelyn is smart for wearing netting.

I went camping this past weekend about 45 minutes from Lake Tahoe. All I saw was a dried up lake, smoke from the nearby forest fire, and powdery dirt that got everything dirty. I envy your view.
My original home was Maine, the Maine state bird is the mosquito. I love smoked salmon. That was awesome how you did that. And the scenery is magnificent. Praise the Lord!

The dorsal hump on pink salmon is composed predominantly of connective tissue (collagen fibers). No cartilage or significant lipid or fat content.

People here in upper Washington keep chinook even when their meat is white! People say once the meat is white they aren’t good but not true!
