    In Sweden we have a delicatessen called ”löjrom” - its roe from a fish ( Coregonus albula) in the salmon family and the only processing is rinse the sack away in cold water and then add 4% salt dry it and freeze it ! Best eaten on toast with Crème Fraiche ( sourcreme) and chopped mild onion and a wedge of lemon…….maybe you could try the same with salmon roe ??

      @@mak9956 heard about char first when I went to Iceland and I got to eat some artic char from the lake that was right outside the restaurant! One my favorite fish to eat wish I could find it fresh here in Pennsylvania

    The chum are called dog salmon because many folks who keep working sled dogs harvested these salmon for feed for their animals. My late mother and many elders of her age preferred the chum salmon for its fat tender flesh, for the taste and looked forward to harvesting chum and the roe to stock their winter caches. I don’t mind chum either especially now that the chinook returning inland to their spawning beds are at endangered numbers. They are a legitimate food source for humans regardless of the “dog salmon”throw away reference.

      except chum are low in fat which is in part, why they are not quite the table fare that the others are. like pinks, they occupy the niche of short rivers. they spawn typically in the first km or 2 of a river, but in larger gravel befitting their large size relative to pinks. so they don't require the same fat reserves that sockeye, coho or chinook do in order to reach the farthest reaches of their natal streams, which may be hundreds of miles. every living thing craves fatty fish, people and animals alike.

      Also known as dog salmon bc they start to develop large sharp k9 type teeth the longer in fresh water while in spawn mode. Great vid Taku

      Appreciate the info here. I went to Vancouver Island, BC a few times on vacation from Hawaii. My dad had moved up there a few years before. I’ve been fishing forever in Hawaii so my dad charted a float plane that flew us out into the middle of the mountains and we were dropped off on a lake for four days alone in the wilderness. Our last great adventure together in the middle of nowhere. The small shack on the lake had a canoe we could use and I’d brought my fishing gear from Hawaii. Trout were jumping everywhere and we caught a bunch of them. The pilot of the bush plane pointed out a river that ran past our lake and said it was full of salmon running upstream. I explained I only had a non-resident alien license that only allowed me to catch rainbow and cut throat trout.
      He laughed, “You’re the only people for 30 miles in every direction. The only way up here is by float plane. No game wardens. I’d go for a salmon if I were you. Good luck, see you guys in four days.”
      So while my dad fly fished for trout from the shore, I paddled the canoe toward the river. Huge salmon were jumping everywhere! I only had 8 pound test line on my reel and the salmon just broke me off like nothing. I set my drag ridiculously loose and finally was able to tire one out and net it into the canoe. My first salmon ever. Strange colors though and from watching Taku’s video here, I know now that it was a chum salmon. Since all we’d brought for food was a couple steaks and some canned goods, fish was going to be it for the next few days. I smoked the salmon over the fire and since we were hungry, it was great to have. It definitely wasn’t the best salmon I’ve ever ate though, and now I know why. It was a damn chum salmon. Oh well, the trout were really good and that was still one of the best adventures with my dad before he died.

      You know, I thought of that as well. Taku is known for his foraging videos and adapting what he finds into the cooking process. Once he changed the format of his videos, I kinda drifted away from watching. So, this video is cool!

    The stream you were fishing by has a major chum return because the local hatchery releases chum fry there every year. Many people in Japan feel it is some of the best roe due to how fresh it is before it is processed. In the past there has been a major floating fish processor anchored within view of where you were fishing. That location is well known in Japan. If you are able to catch a chum out away from the stream it will be much brighter. In fact they are often targeted by the charter boats taking people off the cruise ships. I am not one of those that bad mouth chum salmon when bright but when they color up it truly changes the flavor. Pinks are pretty good if you cook them shortly after catching. I would be glad to take your challenge as they all do have distinct flavor and texture. If given the chance try white king (just that way because of what they ate is the guess).

    Taku-san thank you for another great video. You had mentioned view counts being down lately and not saying this is the reason but the format of this video is more reminiscent of your earlier catch to cook and I for one like this layout the best… there’s just something that is appealingly simple about it that allows me to just ride along mindlessly and get lost in the adventure that I don’t necessarily find w some of your other formats.     I live on Cormorant Island, just off the otherness end of Vancouver Island. So thrilled to see the return of Salmon this year.Sockeye of course is my absolute favorite, but love them all...Dogs and Pinks are excellent for smoking...Love your adventures. You should check out our Island one day...Visit the Bighouse and the Umista cultural Museum. You guys won't be sorry !!

    When it's smoked right the texture is kind of like pork. I like to heavily season after brine (only non-idolized salt). Usually do a batch of lemon pepper. And a batch of Cajun. It comes out good enough to vacuum pac and give as gifts. Most I give it to love it. I've tried baking and roasting it, never again.

    I was told they are called chum salmon because they are not great for eating and are used mainly as chum bait. I can only guess why they would be called dog salmon, maybe cause they make good dog food either in commercially prepared or locals who steam them so the bones become soft and feed them to their dogs.

      Toward the end of spawn the males grow really long teeth aswell as the normal beak growth. There is a saying uglier than a dog salmon for a reason. Give it a Google image search.

    little tip for campfire cooking, set your table upwind from the flame and include a tall object next to the flame. Smoke is drawn up the tall object like a head stone
    or vertical logs. Anything will do it as long as it's taller than the fire pit. Changed my life that tip.

    Before they are near or enter their short spawning streams; they are a very shiny chrome fish! The chum salmon are also called "dog salmon" because the males develop huge canine like teeth.

      Forgot another name for chum or dog salmon: Keta (species nomenclature) salmon commonly used in marketing as it's more attractive. Their flesh is much paler than King, Silver, or Sockeye salmon and more similar in color to pink or humpy salmon.

    Pro tip- find your way up to Kotzebue, AK. The chum up there have a high fat count and are sold into the sushi market. The reason why they are called dogfish is because the natives harvest them to feed their dogs

    Love the whole video. The catch, prep, and recipes were Fab.
    Oddly, people in big Pheasant areas often claim that Grouse aren't good. I love em....and when I heard the rimfire I couldn't help but get excited.
    🙉🙈🙊 I do not know how blasphemous it was, but last Friday I saw a man place a King Salmon fillet, skin down in a cold frying pan. He said, North Atlantic Kings are better than Alaskan and he said that the North Atlantic King has much more fat. Apparently, starting the fish in a cold frying pan then slowly increasing the heat until the skin is crisp. But he said it doesn't work well with the less fat Alaskan King Salmon.
    Go figure - eh!

    In the Interior AK they, the chum, are called dog salmon. I'm not sure if the reason is the wicked jaws, or because the natives use it for dog food for the huskies. The chum are usually fermented in the water before freezing/ drying for the dogs.

    Requesting video on how to store salmon roe for long freezing and longer storage in the fridge (with marinade/ without) very confusing and need more detail. My dad started fishing in bc and he's very good at it. I'm trying to preserve the roe for future eats. TIA! Love the videos :))

    They got the name dog salmon since they use this for their dog sled teams. They are spoiled its really nice to have king salmon all year i wouldeat only that too. We must realise what a national treasure Alaska is and protect it at all cost. Love what you did with it i was so hungry after i watched this. I could eat that roe all day like candy!     To me, Chum and Pink salmon tastes and feels like a chrome steelhead.
    Can't say it's superior/inferior to King/Coho salmon. Just a mix of personal tastes and social bias.
    They're all beautiful fish non the less.

    Yummy. I am sort of unique in that I like leaner salmon to cook or bbq and fattier for sushi. I also love trout so this looks really yummy
