One little suggestion Gemma, after mixing you should let the dough rest for 20-30 minutes. All three dry ingredients you added need little rest😊. I use whole wheat flour every day to make Roti (Indian flat bread) Rested dough becomes very smooth and very easy to roll without parchment paper, just need to rub little oil on roller pin too.

Happy New Year Gemma! This looks awesome. I haven’t bought any cereal except muesli for years because the others are full of so much junk. I’m going to try this recipe, and if you come up with other cereal recipes, that would be great too!
BTW, I recently made Boxty for the first time. I left the potato skins on, seasoned it with Herbes de Provence in the batter, and grated some Parmiggiano-Reggiano over it on the griddle. I couldn’t believe how delicious it turned out! I would love to see a recipe for Boxty added to your Irish repertoire. 🇮🇪 ❤️

Commercially made whole wheat flour does not contain germ. It is removed because it contains a small amount of oil which can cause the flour to go rancid while in storage. If you mill your own flour, you get whole grain flour, sometimes known as Graham flour. This contains germ.

I am happy to see a recipe with little to no sugar and one that is so nutritious. I really appreciate your expertise in making substitutions for store bought products that we can make from scrtatch and not have to pay as much money for. The only cold cereal I eat is bran flakes, so this video is just perfect for me. Any of the processed sugars have such negative effects on the body that I avoid most recipes using them. I also appreciate finding another use for molasses. Keep up the good work!

Well done to you! Thank you so much for trying it out and I'm delighted you got on well!
FYI: For most recipes which don't use yeast as a raising agent, you can substitute GF all purpose blend flour (which usually contains xanthan gum as a binding agent) for all purpose flour (wheat flour), start with 1:1 ratio. A good rule of thumb to keep in mind while alternating the recipe: note to hold back some liquid by using up to 3/4 in one go and adjust it accordingly to get the same consistency with mine.

I would love to see something using oatmeal but not granola. Love, love your videos. You make baking fun. I love to bake but you have taken it to a new level for me. Happy New Year. Looking forward to all you have to share this year.
