One thing you can do to tenderize a steak is to air age it in the refrigerator for 3-4 days. The steak will lose a bit of moisture and the enzymes in the steak will break down the meat making it more tender. Just put the steaks on a cookie grid cooling rack with a pan underneath. There needs to be air circulating underneath. Flip the steaks once day. Do not cover the steaks whatsoever. Not as good as a dry aged steak but the process improves the taste of even a cheap steak.

RE: cooking method. Outdoor gas griddle is the answer.
