- Egusi soup ingredients:
Egusi seeds (grounded)
Meat
Dried or smoked fish
Ponmo
Scotch bonnet
Palmoil
Locust beans
Ugu leaves
Crayfish powder (optional)
meat stock
Salt
Seasoning
Method:
In a bowl, add Egusi, onion purée and water or stock. Mix together to form a thick paste
In a pot, heat up your palm oil, scoop the Egusi paste into it and fry for 5mins on low heat. Make sure to stir so it doesn’t burn
Add the blended pepper and onion and stir. Add in protein and stock or water, seasoning, salt, locust beans, crayfish powder and cook for another 7-10mins.
Add a handful of ugu leaves and turn off heat
Serve with your favorite swallow
