And for Joe and Pom Evans, seeing their business grow from making sausages with a $20 sausage filler in a tiny granny flat to now fulfilling hundreds of orders a week across New Zealand - it's an understatement to say that we were absolutely humbled to be able to capture their story.
Pom explains her love for keeping tradition when producing Sai Ua ไส้อั่ว , a herbaceous spicy pork sausage filled with lemongrass, galangal, and other south east asian herbs.
