I went to Chiang Mai 25 years back. It was very difficult to find this in the markets for takeaway. Street vendors and restaurants had it. I am not a foodie but this was one food I missed. Lucky I saw a recipe by Pallini on the Internet and tried it. Not the real thing but satisfies my craving.

In appearance, the Sai Ua looks remarkably like the South African Boerewors (whose ancestor is the Dutch Verse Worst), although from your description, it's filling is very different. I'm wondering if - like many things that the Dutch East India company brought back to Europe, that there's a tentative 'genealogical' (if that word can be applied to sausage!) link (excuse the pun) between the two... I can imagine that the lemon grass flavour would take the taste levels to new heights... Best regards, Sean

Perdomot I like the versions that are heavier on chilies, galangal, and lemongrass, and less fatty. I loved the herb flavor of the one here www.eatingthaifood.com/2014/03/tong-tem-toh-northern-thai-food-chiang-mai/ but it was a bit too fatty. I'm still searching!

Hey Mark. Had you try the Chiangmai sausage in Siam Paragon ? It's in front of Gourmet Supermarket. It's very good. We always go there for the sausage and sticky rice when we are in Bangkok.

Ohh, in Denmark we have something that looks really similar , but made from pork only,and some black pepper,and a few other ingredients, normally we have it in vintner time. Its called Medister Pølse, where Pølse = sausage.

You should try Thai Herb + Pork liver Sausage at Sankampaeng, ChiangMai. The best I've ever ate.
I am Thai. The menu you should take next is Yum Hoi Dong (ยำหอยดอง). You will feel another world of Thai food.
