- This Thai pork sausage is loaded with so many well balanced layers of flavor that it's hard to put your finger on exactly what you're tasting. If you like sausage and you like thai food you might want to give this one a try.
Sai Ua Sausage:
70% lean pork
30% pork back fat
(pork butt is a good roughly 70/30 substitute)
6% fish sauce
0.7% shrimp paste
6% minced garlic
4% lemongrass
2.5% galangal root
2% tumeric root
1.5% shiitake powder
1% thai chili paste
1% brown sugar
0.5% ginger root
0.4% dried thai chilis
0.4%tamarind concentrate
0.25% kaffir lime leaves
0.25% kaffir lime zest
4% water
30/32mm hog casings

Where did the green curry paste come in ? Didn’t see it in your list of ingredients?

I'm still struggling to get a juicy sausage, sure the pork shoulder i've been getting is too lean.
Next attempt will have pork belly added, pork backfat is almost impossible to get in the UK.
I wonder why it's so hard to get pork backfat in the UK? Belly works well in sausages but not as well in salamis.
btw, I'm working on a breakfast sausage video, should be up the week after next.
@@gourmetwoodsman Butchers probably want it for their own sausages. I bought some online.....think it was more expensive than pork!
Crazy! I usually end up with more fat than I need and render the excess into lard. Guess I'm lucky!
