C/w Nana: Lao Sour Sausages (ໄສ້ອົວສົ້ມ == Sai Oua Som)

  • In this video I show how to make Lao sour sausage. It is pretty much the same recipe as in my video from years ago, with the addition of garlic and cooked rice to make the sausage turn sour. There is also non-traditional ingredients add in this recipe: chicken bouillon and oyster sauce. You may leave these ingredients out if you don't like them.

    So after watching your video and letting sausages to air dry and ferment in your kitchen fir a day, how do you cook your sausage?

      Cook like any way you like. Fry, grill, bake, broil, etc.

    I don’t eat pork, is it doable with chicken?

      You can use chicken meat for the stuffing, but the casing is pork. So you will have to find a substitute casing.

      @@CookingwithNana After a quick google search, while most sausage casings are made of pork, another readily available option is beef casings or sheep casings
