  • LAO SAUSAGE (Sai Oua)
    INGREDIENTS:
    3.5 lbs pork shoulder, coarse ground
    2 lbs pork snout, roughly chopped
    2 lbs pork belly, skinless, diced into small pieces
    5 stalks lemongrass, sliced
    1 bunch green onion, chopped
    1 round onion, diced
    2 cups chopped dill
    1/3 cups kiffir lime leaves, minced
    Hog casing, cleaned, soaked in water
    Kitchen string/twine
    SEASONINGS:
    4 tsp salt
    3 tbsp oyster sauce
    2 tbsp seasoning soy sauce
    2 tbsp toasted chili flakes
    1 tbsp sugar
    1 tbsp Msg
    1 tsp black pepper

    Sausage can be grill, bake, broil, fry or air fry for about 20 minutes. allow to rest for 5 minutes before cutting.
