HOW TO MAKE FILO PASTRY - BEGINNER STEP BY STEP GUIDE. In this video, I'll show you step by step how to make filo (phyllo) pastry dough from scratch.
INGREDIENTS NEEDED:
Filo (Phyllo) Pastry Dough

353 grams all purpose flour (3 cups)
1 teaspoon kosher salt
1 teaspoon baking powder
1 tablespoon olive oil
2 teaspoons white distilled vinegar
3/4 cup - 15 tablespoons warm water
corn starch - to roll out and dust the dough

Bless you, this was the exact recipe I lost after I broke up with my college boyfriend whose father was Greek! I used to make it with him and spanikopita is my favorite! It’s been over 30 years, but I remember how amazing it tasted made from scratch! I will be making this very soon!

My dad and his mother-in-law made it from scratch without a mixer. In the old country there was no mixers.
Ok, so I typed in "phyllo from scratch”, and this was the #2 choice... I am commenting before watching, and I'll tell you later what I really think... You may ask, "Why pick #2?", Well, I'll tell you; it's because #1 guy is that same very enthusiastic guy who is always #1, and I already seen his videos, and Merry Christmas (from scratch) to him and his moustache and his family... Anyway, this lady looks like she might be Greek, and I'm looking for a Greek recipe, so let's see what #2 lady says... I will be honest in my reply to myself.
Good news, #2 lady is good! She doesn't have to be Greek, I trust her anyway... This kind of recipe show is good for guys like me that knows what it's supposed to look like and taste like, but not quite sure how to get there... Anyway, I give the video A+👍, and I will be back with more feedback after I try the Phyllo challenge! ♥️

there are middle eastern coffee shops that actually make those. the best one I had was a small bakery in providence rhode island you can definitely tell they used butter the aroma and flavor. really delicious. then again every year in massachusetts there are always new bakery and coffee shops opening i over spend even though I can make some stuff at home.
I have been wishing to make this from scratch, store bought ones are usually too dry. I have some whey leftover from making ricotta. Since this dough ask for some vinegar, maybe I can use the whey instead.
I made my own fillo dough a couple of years ago for some homemade baklava. Best decision ever. So much better than store bought, well worth the time.
I couldn't agree with you more Audrey. I don't use it everyday so when I do, this is the only way, the difference is night and day. In my Spanakopita video, you can hear how crispy the filo is, when I bit into it

Hahaha baklava has nothing to do with greece. Its registered Turkish baklava. Mainly made in Gaziantep. What you call phyllo is our yufka😂

Just wanted to say thank you for the excellent recipe, it tried this with your spanikopita filling for my youngest sons birthday tomorrow, just finished them (I didn't even leave it in the fridge overnight, I went straight to making them) and my whole family got a taste test and they are absolutely devine❤ will be making this again, it was so much easier than I expected😃😃😃
Isn’t 3/4 cup 12 tbsp? Or should I use 15 tbsp? :)
I used 12tbsp bc it was getting really liquid at that point
Not sure if you know Greek Katoumari a similar pastry, but using melted butter instead, then fried in the frypan until golden and covered with sugar and ground cloves. When fnished you break up pieces of fried pastry and serve.
Also i have used a similar dough you made for spring onion ( green onions) pancakes also fried in frypan until golden, they are delicious, an Indian or Indonesian dish i think!

Interesting you use BP in this, headed to part 2 to see how your dough bakes, but curious your reasoning for BP? I have been perfecting my own recipe and this is my first time coming across BP in this dough.

Yup homemade is better because the store brought dough has that vegetable oil in it and I don't like that

My dough is very hard. Can you tell me what I am doing wrong??
It's really hard to say, if I'm not watching you do it. Did you remember to add the baking powder to the dough? and fleck off excess corn starch after rolling? Each time you make it, you'll get better and better.

I noticed you have a kitchen aid stand mixer. I used mine with the pasta roller attachment to make the dough really thin then rolled them all together. Made it so much more easier and faster to do

Hello Mohamed, you’ll be able to roll them out to 9 x 13 inch, in baby steps, as I did in the video. I’ve found, when completing rolled out to desired length, place on parchment paper between each sheet so they don’t stick together

Stay well! I recommend for best success, line each finished, rolled out filo sheet with a piece of parchment paper as you stack before rolling up and refrigerating. To be sure it doesn’t stick together
