    HOMEMADE MARINARA SAUCE WITH SAN MARZANO TOMATOES. In this video; I'll show you how to make a Simple, Easy Homemade Marinara using San Marzano Tomatoes.
    INGREDIENTS YOU'LL NEED:

    {yields: 4 - 5 cups}
    1/4 cup olive oil
    1 large onion - diced (1 cup)
    kosher salt / fresh finely ground black pepper
    5 garlic cloves - minced
    1/2 cup chardonnay

    1 1/2 teaspoons dried parsley
    1 1/2 teaspoons dried basil

    This was fun to watch. I went to college (many decades ago) at Syracuse University, and all the local Italians regularly referred to red sauce as “gravy,” pasta was “macaroni,” and always dropped the final vowel from Italian words; e.g., manicotti was “man-ah-cot.” But, God, the Italian restaurants in and around Syracuse were the best. The best. Your recipe for “gravy” will be a staple in my house. Grazie mille.

    Thank you so much for the video, I am going to get the tomatoes today and make this , question for ya, my grandma always used sugar in her sauce or made meatballs with raisins to sweeten the sauce and cut down the acidity, is there something about these tomatoes that have like a natural sweetness to them?     I’d been too afraid to try making my own sauce before I watched this video. I’d been buying the best bottled sauce I could find for $8 a jar. As a result and because making Italian dishes was so cost prohibitive, I made them only occasionally.
    Years ago, when I was younger, I would look for recipes for good, red sauce and found them too cumbersome and intimidating. Thinking I could NEVER make a sauce as good as the $8 per jar product I’d been buying, I was reluctant to even try for fear that the disparity in tastes would be too obvious . . . Until I saw this video. You not only show how easy homemade sauce is, but you explain the tips and tricks that make homemade easier, thus removing any doubt that anyone can do this. Because of COVID, my budget is constrained and I can no longer afford those $8 bottles of designer marinara anymore, so attempting to replicate your recipe yesterday was the perfect “do or die” moment for me.
    I went to my local market and purchased double of everything required to make my own sauce, as I wanted to make enough of this sauce to use in my lasagne recipe. I’m glad that several years ago I invested in good-quality cast iron cookware because I found that my Dutch oven is the perfect vehicle in which to sauté and simmer.
    After all the ingredients were simmering, I sampled a few teaspoons of the sauce and could taste the flavor developing. I decided to add a couple of teaspoons of sweetener (as I like a slightly sweeter sauce) and a couple of teaspoons of cornstarch to the mixture to eliminate watery runoff (I like a slightly thicker sauce that will cling to the pasta). I adjusted for taste at the end of the simmer and declared it as good as the jarred sauce I’d been buying! I couldn’t believe how good it was and how easy it was to make. I ladled the sauce into my BlendTech food prep machine and pulsed it a few times until the sauce was the right consistency. I returned the mixture to the pot to simmer for a few minutes more after which I removed it from the heat and let it cool slightly before bottling it. Before I finished bottling the sauce, I asked my husband if he wanted to sample a teaspoon of it, which he did, and he could not tell the difference between what I had made and the pre-made sauce I had been buying.
    Now that I know I can make the best red sauce of any recipe (or jar) I can find, I’ll be making Italian dishes more frequently.

    Shereen, Italy's best tomatoes for sauce are DATTERINI. They are small and oval shaped. Perhaps you do not have them in the states. Best regards.

    Never used white wine! Great idea! Red wine can make any sauce heavy! This girl is my go to for italian. I cook real southern food but her food is the gold standard!

      you can just eliminate it. Can add some of the puree, if desired.

      @Xoxo Leela , if you are in America, you can buy white or red wine with no alcohol, & you can drink it, & i don't know why, but is sold in wine shops & liquor stores, but it has zero alcohol, you could also use white grape juice( no added sugar) , but please do not use any cooking wine as it is all terrible, although alcohol free.     I made this and the KitchenAid semolina pasta recipe. Probably one of the best pasta dishes I’ve ever had! The sauce took a quite a bit longer than 30 minutes to cook, but everything combined beautifully at the end. I’ve never been a “cook” by any means, but your videos make it a really fun experience! It lasts about 3 days in the refrig. or up to 2 months in the freezer stored in freezer safe, tightly sealed containers. Clear quart sized containers work great because they stack perfect. I use them in my Homemade Chicken Stock video. Can't wait to cook with you!

      Susan A thank you so much! That makes me so happy! You’re awesome! 💗 You can refrig. or freeze to braise tough cuts of meats, ribs, poach fish, add to soups (like pasta e fagioli) or make with rice 😊
      If I’m making a bolognese or ragù, I don’t drain it, since I need the volume for a long cook time.

    I am from kerala,India so we don't get canned tomatoes that much only fresh tomatoes so yeah I am confused about what to do

    I don’t understand why you would drain the juice from the cans and sit it aside and then pour in half a can of water while simmering it. Why not just leave the tomato juice in?

      I understand your question and should have better explained why in my vid. My whole life, i've added it until I made an Ina Garten recipe, from which I will share soon and her recipe (actually a recipe she has in her book from one of her favorite restaurants) drained them before adding to their sauce. It was ten times better! From that moment on, I drained them. I particularly never cared for the flavor of puree and it made sense. In my opinion it tastes better. If I'm braising for a long cook time, I leave it because I need the volume and the meat flavors it.
