Hi Becky! If you are ever running low on powdered sugar, you can make your own! Combine 1 cup granulated sugar with 1 tablespoon cornstarch in a blender & blend until powdery. Yields about 1.5 cups powdered sugar. A tip from my grandma in the cookbook she wrote of family recipes. 😊

My father was a baker and when he made snicker doodles, he always flattened them with the underside of a glass. This spreads the dough and helps to make them crunchy. Hope this suggestion will come in handy in the future.

Becky, I made your homemade marshmallow recipe last year with my sister. We swapped out 1/3-1/2 of the corn syrup with molasses; the results were INSANE!!! We were raving about them for WEEKS and they were so amazing. Your recipe for marshmallows was so easy to follow!!! ♥️♥️♥️
I wonder if you could direct swap the entire amount of corn syrup for molasses? I point blank won't use corn syrup, it's incredibly bad for you. And I just bypass recipes asking for it. The mollasses is fairly unrefined in the sugar making process, so at least has some nutrients benefits still.
I bet apple cider and pomegranate molasses would work well too.
@@lizzy9975 Maybe maple syrup or honey could work as alternatives for corn syrup? The maple syrup would likely need to be cooked down a bit more to have the right consistency, though. I’m thinking that since molasses adds such amazing flavor, these might do so, as well as being healthier options to corn syrup. 😊
I was going to ask this too. If we don't use corn syrup what can we use? Honey, maple syrup or Agave? Good to know it works too! I heard sugar and water mixed together works too.

I freeze dried pumpkin puree last year & it rehydrates beautifully! I really like it & Im glad i did that rather than freezing for space in the freezers 😊

Recipes all look WONDERFUL- I owned my own home baking business for the holidays - little tip… use parchment vs tissue! The tissue tends to draw grease of out of your product & makes the boxes limp. ❤

Hey Becky, I‘ve been enjoying your videos for quite some time now and love them. They are like a comfy blanket this time of year. Just a quick and life changing tip for every recepe using parchment paper. Just crinkle it up into a ball before using it and then unfold it onto whatever dish you‘re using it on/in. That way it holds its shape and is less flimsy. 😊 You‘re welcome everyone 😉 Sending lots of love from Germany

I cannot tell you how much I appreciate the way that you fix the volume whenever there are loud sounds like the stand mixer and banging the baking sheets on the counter. My ears and sensitive and it's so lovely to know that I can relax when I watch your videos and not have my fingers on the volume button constantly adjusting.

10 grams is 2 tea spoons (of salt or liquid) so you’ll be able to add more spice next time
10 g is a third of the initial puree you added, so you see it’s something substantial not 3/4 of a teaspoon
If you have a spice grinder, just put regular white sugar in it and grind it until it becomes powered sugar! Alternatively, you could use a mortar and pestle like they do in the Middle East.
I love how organised you are and all the preserving and meal you do. You have inspired me to big cooking sessions. I also love how you make homemade gifts for people. Food is my love language as well. You do a great job 😊
When doing any kind of tray bake like cookies etc., especially new recipes, I find it helpful to do a "test" batch tray. It helps me figure out if the oven is running hotter than expected, as well as whether a new cookie needs flattening or topping with sugar before or after baking.

I've seen another vlogger put the pumpkin puree in a cheesecloth, and squeeze the liquid out. Also, using only the egg yoke, leaving out the whites for a better texture in the cookie 🙂
To help on days where I bake multiple things, I bought a 2nd bowl for my stand mixer. Comes in handy quite often. 😊

Becky, they make a waxed tissue paper for baked goods. That way the grease does not soak through your tissue paper.
You can use golden syrup as a corn syrup substitute
In your pumpkin baked goods add a little nutmeg and pinch of ground cardamom...

I just learned that you can make powdered sugar by whizzing regular sugar in your vitamix until it's powdered!!! For future reference... I am so gonna try these recipes!!
I have 2 bowls for my kitchen aid 4.5 quart mixer, that way I always have a spare bowl if I need it. They aren't that expensive if you buy a used bowl online.

Hay Becky! A tip for powdered sugar, you can make your own! Just put normal sugar in your food processor, or blender for a smaller batch, for a few seconds until the desired consistency! For a really fine finish, use a tight weave sive to get any remaining sugar crystals out. Also, it can make castor sugar by shortening the time processing. You should only need a few seconds to make the powdered sugar!
I've made chocolate marshmallows, peppermint, strawberry and the ultimate favorite was honey whiskey marshmallows! Hint:use your bench scraper to cut the marshmallows and cut the powdered sugar for dusting with cornstarch or they get too sweet. When I make scones, I like to brush them with heavy cream instead of egg wash and then sprinkle with coarse deco sugar. Give a GREAT sweet crunch to the soft flaky scones!

Btw, do you cut the powdered sugar, half and half, with corn starch before dusting? I’ve never made marshmallows before and think I’d like to give it a try for Thanksgiving this year.
@@kfgabriele9852 I literally just used a marshmallow recipe (mine calls for streaming in the hot sugar mixture slowly, as opposed to just pouring it all in) and I just added a couple of ounces of honey whisky-less than a shot-while the machine is beating. (we had some we'd bought in Ireland, but you could use any honey flavored whiskey you like) The sugar mix makes the whole thing so hot that most of the alcohol evaporates off, leaving the flavor behind! I presume you could do the same with any booze you like, lol
And yes, I spray the dish like Becky did, but I don't use the paper. Cut the powdered sugar halvsies with corn starch for dusting the top and cutting. Can also use rice flour. OR if you want to get really fancy, you can roll the cut sides in crushed candy canes, colored jimmies, chocolate marshmallows rolled in graham cracker crumbs...the possibilities really are endless! If kept in a sealed container, the finished marshmallows will last a LONG LONG time (I have some over a year old, stored in a mason jar). SO MUCH BETTER than store bought, and once you get the first batch under your belt, so easy! I've even made mini marshmallows for hot cocoa, just spread them in a much thinner layer (jelly roll pans work great) and cut into smaller cubes.

You should keep buttermilk powder on hand. So convenient and you don’t have to worry about it spoiling if you only use buttermilk occasionally.
And keep it in the fridge once you open it and it will last (almost) forever!

Hi, I just bring the scone dough together in the bowl without extra flour then very lightly flour your work surfaces, put the dough out on the work surface and pat out to 1/4 inch cut with round 2inch cookie cutters, put back in fridge for 20min then pre heat oven. I use to make about 250 scones a day for my Tea room restaurant in Scotland

You can make powdered sugar with white sugar and cornstarch. Similar to you making your brown sugar.

I was taught never to knead or fold scones by my husbands grandmother. She was welsh. Just pat dough into shape. They rose beautifully.
I bang my cookies in the oven half way through their baking time. It makes them flatten out and spread more evenly.

You can do that with the monk fruit sweetener too or allulose.
I use a coffee mill to powder small batches of sugar (I don't use the mill for coffee, mostly flax seeds).

Measuring your flour reminded me of one of your previous videoes. You made breakfast cookies with oat flour & added rolled oats. You had to place the mixture into the refrigerator to solidify before you could scoop it out. .... I looked up the carbs of Oat Flour and in so doing found that 1 cup all purpose flour = 1⅓ or 1¼ Oat Flour. So that is probably why your dough was more liquidly. Just a thought & wanted to share.

I'm going to have to make these, I love all things pumpkin! Vanilla, garlic, and cheese are all things that should be measured with your heart. Whoopie pies are supposed to look like that but I can understand why they would be better flattened out. You're so thoughtful, I'm sure everyone enjoyed your efforts in the kitchen.
Hi Becky, I absolutely love all things fall, especially pumpkin, so I really enjoyed watching this video! I also wanted to let you know that whenever you don't have powdered sugar in the house, you can easily make your own by just whirring regular granulated sugar in a blender or food processor until you get the consistency of powdered sugar. I don't buy powdered sugar anymore because this is so easy.
I bought my then 8 year old grandson that whisk and whenever he uses it he calls it his magic whisk!!

wanted to suggest that you make your own powdered sugar. all you need is 1 tablespoon per cup of regular sugar and blend that up for a bit until it reaches the consistency of powder.

I know someone else has probably mentioned it but … Becky! You have a Vitamix!! You can make your OWN powdered sugar in your Vitamix (or any other high powered blender actually)… especially if you’re going to use the sugar right away, you just ‘whiz’ it up for about 5 minutes or so and voila! Powdered sugar. If you want to ‘store’ it for any length of time just add some cornstarch (or arrowroot I would imagine) to keep it from clumping. But frankly, I only make about as much as I can use at a time.

Everything looks delicious!! I canned homemade apple butter from my daughter's apple tree and I made apple butter snickerdoodles. They were delicious. Also I have a tip for you. After I rolled the cookie dough in the cinnamon and sugar. I flattened them slightly. They turned out perfect. Hope that helps. Thank you for sharing.
The next time you make the Whoopie pies, put your baking sheets in the oven and heat them up. When Your Whoopie pie dough is ready, take the baking sheets out of the oven and place your scoops of dough on the warm cookie sheets. They will melt down just enough that it creates a beautiful, smooth surface on top.
