I mix corn starch, baking powder and flour, and some garlic salt pepper and whatever else you like. I bake mine on a wire rack 425f for 40 minutes flip and spray with pam if needed and another 15 minutes. Can't beat it. No deep fried mess, easy clean up

I use a Korean fried chicken mix you can get at H Mart or online which have a combo of flour and corn starch in it. But I add a bit more of corn starch and add extra of my own seasoning in there like chicken or beef Dasida (it’s a Korean seasoning similar to bullion). Double fry the chicken wings and VOILA. For really pretty chicken, I season my chicken with Sazon as well as use it to season the dry flour mix or wet batter. Use Sazon con Azafran or Sazon with coriandar & Annatto.

Also go to Whole Foods and get the Hawaiian style batter 1) flour wet batter 2) corn starch wet batter 3) potato starch wet batter 4) club soda wet batter 5) Hawaiian batter 6) pineapple juice batter
You can use any of those methods and add baking powder! BOOM. Lighter with fluffiness added to the crispy. The coating puffs up in the oil. Kind of the difference between regular and extra crispy at KFC. But honestly it’s so good you might not want to soak it in sauce. Dipping is better, but I like crispy better than spicy, so that’s a personal preference. Interesting that the cornstarch was the best though. Imagine cornstarch + baking powder. 😋

I have to get used to using cast iron to fry my chicken. I let my grease get to 350, but it seemed the grease was too hot and burning. Any tips community using cast iron. I don't have the grease issues when using a non-stick pan, however
I always bust out laughing when people think that we mean cleaning or killing bacteria when we say "Clean/Wash Your Meat!" Anyone with sense knows you cannot kill the bacteria in meat by adding lemon/lime, salt, and or vinegar. It just adds additional flavor and helps make the meat juicy and tender and removes any residual gunk from the chicken pieces. especially when they've been processed in a meat plant or butchers shop. Youd be surprised by how much stuff is left floating in the water afterward. You definitely wouldn't want to eat that stuff.JS
I’m wondering about adding pickle juice to the brine. Does it leave a pickle aftertaste or does it work more like mustard does as a baste - you really don’t taste it . 😊

I use just baking powder, salt & pepper. Then I bake them in the oven around 425 degrees. Super crispy!

Yeah if you mix the potato starch 50/50 with APF you’ll get the same crispiness as PS but you will get the darker color.
