I love your recipes SO MUCH. And it's not just because you have such amazing ones, but because of the insights you give to cooking different dishes or using techniques. I've always struggled with frying coated things, because my coating always comes loose, so the fact you let it rest to get the flour to bond with the food is mind-blowing to me, as I've always coated the food just before I fry it. Now everything makes sense. I feel like I get better at cooking in general, not just at cooking Chinese food, by watching your videos, and it's magical. Thank you for teaching us what you know!!! (So far, my favourite recipe of yours has been the lionhead meatballs, but I can see this spice mix and the trick of coating the outside of fried foods with it maybe surpassing them). I'm glad you spoke about thighs as an alternative. Wings have had a weirdly positive international reputation in recent years after being the throw away cut for a long time. It's good that they are fashionable as it reduces food waste but they aren't that cheap anymore.

Suffice to say that last step you mentioned is optional clearly adds a dimension. Recently saw "The Streets: Hong Kong" with Dan Hong on SBS Australia and some of the offerings by some Hong Kong institutions that are wildly popular remind of your dishes. Since i first saw this in one of your other videos, the sichuan pepper blend has been my go-to seasoning for anything crispy or fried. It is even amazing on pizza

I made these wings last night. I actually made 2 different recipes for salt and pepper wings to compare. This one blew the other one away. The other recipe was a more mainstream American recipe and did not have the amazing flavor of this one. The all purpose flour and cornstarch combo here was the perfect crunch. The other recipe used potato starch which was an even thicker, crunchier wing, but it was actually too much. Will use this recipe and the salt and pepper seasoning over and over again.
Thanks, Mandy for explaining the science behind the steps. It makes it easier to understand why it worked or didn't work. I have a packet of this seasoning but didn't know what to do with it. Now I know haha. Gonna get some wings now. 😋
I always wondered how to get fried food that crunchy. She really explained it very well, thank you. I never know what to do with my old Sichuan pepper corns i bought so i will make this season powder. I think my salt & pepper shrimp will also level up thanks to what i learned. 🙏

I have tried to replicate it but never the same taste as theirs again thank you for this recipe I will attempt in the near future. 🤤I'm drooling already.

So good, a trick I learnt from local takeaway is to use pork Siu Mai. Quick steam then coat the same and deep fry and follow same. I usually cook them with ginger, green chillies, white onion and spring onion. Hmmm so good Asian food make white lives better 😋👍❤️

Oh yes. I made her cashew chicken last night. As if the finest household recipe, but restaurant quality. A nephew's fiance wanted Chinese for her birthday. Could not have made better memories paired with fried rice and smashed cucumbers (also Souped Up!). I can't wait to try this particular restaurant favorite, and see how it stacks up. Salt and pepper chicken is the finest penultimate long-night-out drinking and dancing starter. Many of my best nights prove it.

Yes, you can do the first fry the day before and double fry whenever you are ready. You can also freeze the wings after the first fry and double fry whenever youa re ready. No need to defrost, the wings will just take a bit longer to fry since they are frozen.

Looks yummy! Although most of my family can’t eat the hot chilies. I know it will change the flavor using red and green bell peppers, however that’s what I’ll used instead. 🙂
Frying oil can be reused for other frying purpose a few times (3-4 times). You just need to store it in the fridge. Once you fry food in it a few times, it will be unhealthy and then you have to throw it away. I save the original big plastic oil bottles and use them to collect frying oil. Once I have enough amount, I will dispose of it. You can look up frying oil recycling near you. Used frying oil can be recycled for many things and it is good for the environment.

What kind of red and green chilis are you using? I live near Mexico and and am rural so no Asian market nearby. I have access to jalapeno, serrano, bell peppers, sweet peppers. I don't like extreme heat; prefer moderate so I can still taste the food. What peppers would you suggest? Thanks!
