How Chinese Chef Cooks Garlic Fried Chicken Thighs

    The chicken thighs get an incredible flavor boost by being marinated in a mixture of soy sauce, rice wine, sesame oil, white pepper, and crushed garlic. The garlic gets infused into the chicken as it marinates.
    Then the thighs are double fried using the traditional Chinese technique to get them ultra crispy on the outside while staying tender and moist inside.
    This restaurant-quality dish packs a punchy garlic flavor and makes a fantastic main course or appetizer. The Chinese chef shares all his secrets for perfect fried chicken every time, including the key step of marinating in a garlic soy sauce mixture. You'll be craving these garlic chicken thighs weekly after trying this amazing recipe!
    Here is the recipe for Chinese Cantonese Garlic Fried Chicken Thighs:
    Ingredients:
    2 kg chicken thighs
    2 tbsp crushed garlic
    2 tsp salt
    White pepper to taste
    1 tbsp sugar
    2 tsp chicken bouillon powder
    Oyster sauce to drizzle
    Sesame oil to drizzle
    Chinese rice wine to drizzle
    Olive oil to drizzle
    1 egg
    Corn starch
    All-purpose flour
    Oil for deep frying
    Instructions:
    1. Wash and clean the chicken thighs. Cut a slit in each thigh as demonstrated in the video.
    2. In a bowl, make the marinade by mixing together the crushed garlic, salt, white pepper, sugar, chicken bouillon powder, oyster sauce, sesame oil, rice wine, and olive oil.
    3. Beat the egg and add enough cornstarch to make a thick marinade batter. Add this to the marinade bowl and mix well.
    4. Add the chicken thighs to the marinade and toss to coat evenly. Cover and marinate for 1-2 hours.
    5. In a separate bowl, whisk together the all-purpose flour and 1 tbsp corn starch.
    6. Remove the marinated chicken thighs and coat them thoroughly in the flour mixture, shaking off any excess.
    7. Preheat oil for deep frying to 350°F (175°C).
    8. Fry the coated chicken thighs for 2-3 minutes until a crust starts to form, then remove from oil and set aside.
    9. Once all the thighs have been fried once, heat the oil up to high heat (400°F/205°C).
    10. Fry the chicken thighs a second time for 5-8 minutes until crispy and golden brown. Turn down the heat if the oil gets too hot.
    11. Remove the fried chicken thighs from oil and drain on a wire rack or paper towel.
    Serve the hot and crispy Cantonese garlic fried chicken thighs immediately. Enjoy!

      i've been working on mines. I watched about a month's worth of chinese frying chicken and ive seen the methods and used them, and my shit is fucking banging dude, no lie. I figured out the batters for different cuts of the chicken being used. Working on my food before I start vending. A lot of people use buttermilk, but that's just a bs gimmick in my opinion. My chicken takes 3/4 days to make, but it's worth it on every bite. Good luck!

    I appreciate all the little details that people seem to forget to mention! Like, where exactly and why to make the cut into the thigh, why you only want to marinate 2 hours or else it's too strong, why we use the corn starch and not too much, why it is important to use ALOT of flour in your bowl, why we need to cover every wet area including the skin to not cause oil explosions!       It’s neutral and I think it might have a higher smoke point as opposed to vegetable oil.

    Even though my fried chicken days will be limited having gone from 309 lbs. to 245 and continuing my journey from 245 to 172 and 10% body fat but being a fellow chef, loving great food and know the time will come when I can treat myself to a couple of pieces of chicken with the skin still on, I am truly going to save this video and attempt the recipe myself but I will surely add some spice to the marinade.

    I've watched both of your previous videos. Their ingredients and amounts are the same. This one should be the same, also. Stick to your guns! It's very nice that you listen to your blogger's comments and concerns, but this is YOUR recipe! If they want to make changes to your recipe, they are free to do it, but when I watch a recipe video, I just want to learn the recipe, and make it the way the chef made it, first. Until I make it, I can't criticize it. Remember the saying: "Those that didn't create it first, will be the first ones to attempt to destroy it."       Perfect comment! I agree 100%! I don't want him to allow others to change his recipes. Every single time I go to someone:s channel to get their recipe, invariably there will be comments on how they cook theirs or how they changed the recipe and then have the nerve to criticize the outcome of their dish. I want to enjoy learning how someone else cooks and love the dish without changing it.

      I thought the video was fine but I do forget from time to time that 80% and more of the population has some type of a.d.d. or a.d.h.d. which is why apps like tik tok would be amazing if you could squeeze all this info into an extremely small window in comparison to this videos length.     Bro I learnt a lot of new things from you as many of the comments before me have identified. Knowing when the chicken is cooked is when all the moisture content has gone. Thats similar to cooking fried bread in fat or oil. When it stops bubbling (frying), its cooked! Awesome mate. I will watch this again until I have it in my 61 year old brain lol.     For those that are unware, egg is used in many dishes as a binder. Not just in Asia. It's used for batter as in this video.
    It helps the flour mix stick to the meat or whatever you want to coat. It's also used as a binder for meatloaf and burgers.

I never thought to score away the meat by the bone to allow better cooking at the bone... reduced a lot of time frying bone-in chicken thighs. I won't say it's "better" than KFC but I will say it's AS GOOD AND SATISFYING in its own way... so KFC and YOU'RE recipe are both at the top of my favorite fried chicken (I grew up on KFC original recipe chicken). This is by far the BEST Chinese or Asian Fried Chicken recipe. Thanx very much!!!! (and yes, I add sugar or sweetener to a lot of my recipes because it offsets and softens saltiness and vinegar/citrus flavors without making it sweet...kinda mellows the flavors!!! Great Recipe!!!
