  • Get ready to achieve ultimate crispy goodness with your chicken wings! In this video, we compare two methods for achieving the perfect crunch: using baking powder and a combination of baking powder and cornstarch. Join us in the kitchen as we reveal the secrets to irresistibly crispy wings that will have you hooked from the first bite.
    INGREDIENTS
    Garlic Parmesan Dry Rub
    • 2 tbsp fine powdered parmesan cheese
    • 1 tbsp granulated garlic
    • 1 tbsp fine garlic powder
    • 1 tbsp onion powder
    • 2 tsp chicken bouillon
    • 1 tsp ground black pepper
    • 1 tsp smoked paprika
    • 1 tsp dried parsley
    • 1 tsp salt
    COOKING TIMES & TEMPS (Convection setting ON)
    1) 375F for 20 min, flip and season
    2) 425F for 20 min, flip and re-season
    3) 425F for 15 min, flip and re-season
    4) 425F for 5 min, flip and re-season
    5) Remove from oven, flip and let cool for 5-10 minutes.

    I am gluten free, and my dad was a chef. I use 1/4 of the baking powder you used and rest corn starch. I add my spices to the dry mix. I shake it in a brown paper lunch sack. Then add the chicken and shake it up. I only turn mine twice. At the end i sometimes add a chipotle dry rub for last turns. Good video. Corn starch is a savior for me for a lot of things.

      My recipe is similar - spices mixed with 1T baking powder right in the beginning and just flip a few times. No oil. Comes out really crispy. I wouldn’t mind adding a bit of cornstarch next time.

    I tried this method today with one slight modification. For The last 20 minutes I brushed Buffalo sauce on both sides and when done tossed still hot wings in a little more sauce. They came out perfect. Crunch and taste were awesome.

    Since baking powder has corn starch in it, this makes sense! Love fried wings using baking powder! Discovered this accidentally years ago b/c I thought I was adding something else (can't remember what) and accidentally picked up the baking powder....the rest was history! So crispy, yes!

    I made this with just just baking powder (doing low starch) when you first published the video and they were pretty good. Since then I've invested in an air fryer and those are much quicker. After some experimenting with a Cosori Blaze (has two burners, one on the bottom) I find I can do wings at 400°F in 14 minutes. I also experimented with frozen wings directly out of the freezer and those took 17 minutes. The frozen ones turned out to be better because if you let them cook to internal 170° F the outside will get even crispier since it's in there longer. Thanks.

    I needed to try this just prior to the Michigan/Penn State game. Don’t have convection but I do have air fry oven, so that’s what I used. Dry seasoning is excellent. I made one change as I couldn’t locate granulated garlic locally. So I went with minced garlic. I’m going to do this again when I get the granulated garlic. Nice job on the vid and explanations. I must have watched it about 5 times just to get the movements down. I’ll give the chef and the recipe 5-stars.

    I adjusted the times and temps on this recipe tonight to work in an air fryer and all I can say is OMG!!!!! That crispy.
    I waited until the last two flips to season the second batch, the parm wanted to burn a bit in the air fryer, and the recipe required about the double the amount of salt and an equal amount of chili powder.
    Beyond crispy and the rub is so good. I can't wait to smoke a chicken and use that rub...

      I just bought an air fryer and was looking for a crispy recipe but a couple videos said that baking soda can add a funky flavor to the wings. Did you notice anything different?

    You can hear the difference, you can see a slight color difference and at 7:30 am, I can only imagine the taste of those delectable looking chicken wings! Honestly can't wait to try this as I have never used either items in my fried chicken recipes!       It didn’t take much time at all! Frying is definitely quicker, but if we’re trying to keep a little on the healthier side, baking is definitely to go too.

      @@jeffheim163 If you're going to fry something never turn the heat down. It will make your food greasy.
      Put it on 3 and allow the oil to get hot for at least 20 minutes. Right before you put the chicken in, turn it up to 4.

    I’m making some right now I just use all purpose flour and I put the cornstarch in the bag last shake the chicken up and bake the rack I used made it cook evenly . They both sound crunchy 🤣🤣

    You might also find the potato starch can even improve on those. Just change out the corn starch for potato starch. everything else the same. Thanks for this great seasoning recipe.

    Hey Chef Ange, is there anyway you could create some videos covering the topic of Make Ahead and then Freeze for Convenience meal prep ideas? I am really interested in ways to spend say an entire weekend prepping and freezing portioned proteins etc and then having a simple dinner by just grabbing parts from the freezer. I would love to see your take on this type of prep. Thanks for the amazing content otherwise.

      Thank you so much! If you’re trying to leave out the corn starch, just use the baking powder and use less. Baking powder is only about 4 g of carbs per tablespoon so just using 1 tablespoon is still extremely low carb. If you don’t want to use any, just leave it out.

    I use this method on thighs and drumsticks as well. I will never bake chicken without baking soda again. Now I am going to have to try adding cornstarch as well.

    I used to use panko and bread crumbs and fry my wings - but I will CERTAINLY be trying this. Baking powder is amazing. I currently use a mixture of it with Probiotic Acidophilus and coconut water to brush my teeth. I've seen a HUGE change since getting off fluride toothpaste - for the better!

    You made perfect crispy buffalo chicken wings i think ading combination baking powder and corntarch would be better than just baking powder because of corntarch gives us little flavour i enjoyed this video and very helpful for everyone thanks.

    I have my chkn wings in a wet marinade. When I get ready to put in oven do I need to dry them. I think it will take off all that good marinade. Your idea ?

      Marinades make chicken skin wet, and it’s difficult for wet skin to get crispy.

      Non-aerosol spray oil. The aerosol version turn black and I never use it. I used avocado oil in the video. Olive oil would work too.

    I tried this recipe. The seasoning was delicious . I was afraid the parm was going to burn but it didn't. Not sure if i used the right amount of corn starch and baking powder because my wings were good but not crispy

    I’m a firm believer in corn starch only! Lightly coat wings in corn starch, season heavily, dip in egg batter, reapply corn starch, 2nd layer of seasoning. Set oven to self cleaning mode and put in wings. When they come out they are the crunchiest!

    I have never been much of a cook so I am trying to learn to make some of my favorite foods and chicken wings is one of them. Especially when I went to Sam's and found the wings I usually buy were $8.33 a pound. I watched and really liked your video but I started thinking what is the difference between corn starch and baking powder? So, I looked at the ingredients in baking powder and what did I find? Baking powder is corn starch, sodium bicarbonate, and monocalcium phosphate. Then I look at the ingredients in baking soda and what do I find? It's sole ingredient is sodium bicarbonate. So it appears baking powder is just corn starch with a little baking soda added.

    Making 6 wings like this today. Each wing (flat + drum) will have a different seasoning:
    1. Parm cracked pepper, salt, onoin powder, garlic
    2. hot chicken rub'
    3. hot chicken rub with added hot honey toward the last 10 min.
    4. dirty bird rub
    5. italian dressing.
    6. lemon pepper rub
    we'll see..

      @@ChefAnge I made this. The Good: it was excellent. The bad: not crispy. I think my oven is to blame. Still I will try again with the same format. Probably need to ramp the temp up 25 degrees.

      Prob same time. The results will not be as crispy but use 10-15 degrees higher and more flipping.

      Yes or olive oil spray. Non aerosol. Aerosol spray oil gets black when heated.

    When you spray the wings with "oil" what kind of oil are you using? Olive oil? Avocado oil?

      Either will work. In this video I think it was the avocado oil. Always non aresol. Aresol oil will turn black.

    The FIRST ingredient in most baking powders is CORNSTARCH. What would happen if you mixed, say, 3 parts cornstarch with 1 part baking SODA, to avoid the acid components of baking powder?

    My oven throw out so much hot air, in side. ITS LIKE A AIR FRYER... I noticed your oven like my fan 7:33 Looks like we can used them for AIR FRYERS

      Air fryers are really just small convection ovens with slightly more fan power.

    I'm thinking about one night of wet brine then drying of with paper towel than cornstarch+baking powder for a few hours than apply some dry rub. Finally I bake indirectly it in a Weber kettle using some cherry wood smoke.

      Yes. Once l found this out l use it all the time for less cleanup. It doesn't burn. You can put anything directly onto it while cooking and your food won't stick.
