Old Fashioned Tomato Pie

  • The baking temperatures are 400 for the crust, 375 for the complete pie. I think I hurried over those in the video.
    Crust
    1 1/2 Cups Flour (All Purpose or Bread Flour or a Mixture of the Two
    1/2 Cup or 1 Stick Frozen Butter
    1 Egg,, Beaten
    1/4 Cup Ice Water, Approximately as Needed
    Pie
    2 Pounds of Ripe Tomatoes, Peeled and Sliced
    1/2 to 1 Teaspoon of Salt
    1 Cup Grated Parmesan or Romano Cheese
    3 Cup of Your Favorite Cheese, Grated (I use Mozzarella, Cheddar and Jack
    1/2 Cup Mayo and 1 Egg (Or 1/3 Cup Strained Greek Yogurt and 2 Eggs)
    1 Medium Onion, Chopped or Sliced
    6 Basil Leaves Sliced (Or More If You Like)
    1/4 Teaspoon Dill
    1/4 Teaspoon Garlic Powder
    Black Pepper to Taste

    I wonder about adding some flour with the tomatoes to firm up the liquid during baking. The crust looks perfect, such a beautiful pie. I like your idea of adding spinach, that would be good, too.
    I remember my grandmother making this (she was born in 1889). She would slice the tomatoes and onions and bake them in the oven for about 20 minutes first to get the moisture out and give them a head start before making the pie. She added what was left from the garden so every tomato pie we had was a bit different.

    This was soooo helpful! My mom wasn’t a cook so even when I follow recipes there are things that aren’t intuitive to me. I love your calm, thorough videos.

      Thank you, Tamson. I am almost totally recovered. I am trying to build my strength back up. At my age, it is use it or lose it. I have been building a new garden spot that is easier to maintain. I will post a little about that in coming weeks.

    I don't think I've ever really heard of tomato pie, but it does sound like it would be good!

      I guess it is a regional thing. It is very tasty. Savory, not sweet.

    Delicious!!!! I love what you did with the crust I'll definitely be changing my pie crust up to that. The addition of onion is awesome. BTW love that "man" sized slice!!

      This crust may be too tough for your apple pie and such, but it works great on "wet" pies, like this and pot pies.

      I have a couple posted. For keto, I would simply make a thick cheese layer, melt it, then add the rest of the ingredients.

    Did you think about using hot water pastry it’s very sturdy and easy too 👍 hubby loves tomatoes and eats tomato sandwiches so he would eat that but I’d have to reduce the cheese a bit 🥰
