Tomato Pie with Bacon and Onion Deep Dish
Tomato Pie with Bacon and Onion
Ingredients
⦁ 1 refrigerated rolled up pie crust
⦁ 6 slices bacon fried
⦁ 3 small tomatoes sliced
⦁ 1/2 tsp salt
⦁ 1/8 tsp pepper
⦁ 1/2 onion sliced
⦁ 1 cup mayonnaise
⦁ 1/4 cup sour cream
⦁ 2 1/2 cups Italian shredded cheese
Instructions
Let the pie crust come to room temperature
Roll out crust to 12 inches and place in deep dish pie plate
Place parchment paper in crust and weigh it down, I used pinto beans. Bake at 400 degrees for 9 minutes
Remove parchment paper and weight when you remove the crust from the oven
Let crust cool down before assembling the pie
Slice tomatoes and onion. Put tomatoes on paper towels and salt lightly to remove excess moisture
Mix mayonnaise, sour cream, salt, pepper, and 2 cups of cheese in a medium bowl
Start assembling the pie with the following layers:
1: Onions
2: Bacon
3: Mayo mix
4: Tomatoes
5: Onions
6: Tomatoes
7: Mayo mix
8: Onions
9: Bacon
10: Mayo mix
11: Cover top with 1/2 cup cheese
You can change the layers if you want to like I did in the video.
Bake the pie at 375 degrees for 35 minutes.
Place foil over the top if it is getting to dark

By the way, tell Call that I made both his featured recipes on old-fashioned pickled eggs and the beet pickled eggs (I did add some sugar, though), and those are going into my permanent file in the event I have a hankering for them. I also forgot to mention that I have two cats too that I got from a friend who was giving away kittens. Got them last December, and one of them is a tuxedo cat, somewhat similar to one of yours. The cats are a brother and sister and look very different from each other. They eat a lot. They also have a habit of finding dead birds and lizards, bringing the carcasses inside my patio area, which generate a lot of ant activity. Awful.

Thanks very much Cindy. Yes, cheddar cheese would work, it won't have the Italian flavor. You might add some Italian season to it for the flavor. We really enjoyed this recipe and Calvin said that he would like to have one made with the cheddar cheese.

Good question. There is recipes for green tomato pie but most of them call for adding a little sugar. We love fried green tomatoes so I think that we would like a green tomato pie as well.
