We’ve been overrun with tomatoes this year thanks to my husband! For a couple of weeks he was harvesting 50-75 tomatoes a day! We did our best to give some away because for whatever reason my husband didn’t want me to can any. I can’t wait to use some of them for a Tomato Pie!
Pre baked your crust 6-8 minutes its ok but put an white egg on your pie crust before pre-baked it it will SEAL the bottom of the pie crust....your crust will stay dry and crispy ....putting a tone of cheese wont keep the crust from getting soggy and mushy because the tomatoes juice will go STRAIGHT down the bottom. And if you use fresh onions and fresh herbs its the same , fresh vegetables make a lot's of liquid. I cook my onions, just enough to get all the water out and that way it will give a sweet taste. I put dry ciboule and dry basil and a little bit of dry mint. A hint of dry garlic and onions but really not much, remember we wanted the tomatoes to be the first ingredients we taste!!! I put a bit of cheese on the bottom but its only fresh parmesan but ( FIRST because its a quality cheese and its really tasty and parmesan its a dry cheese , and it will absorb all humidity in bottom of the pie and it will melt and stretch when we gona eat it!!!!) not much because its not a cheese pie we're making there !!! I put a little more cheese in between half of the slices tomatoes and its good quality provolone cheese and with fresh REAL mozzarella( de BUFFALONNE ) or COW its ok if you don't find it , i put little chunks or slices but again, not to much! And i put a savory crumble on top but without oatmeal of course and i put a lot's of crumble to make like a dome. Here my family each summer when our tomatoes started coming out we all craving of this pie and we eat a refreshing water melon salad that contains all good ingredients in like feta cheese with fresh herbs ,black olive , red onions soak in vinegar and more goodies And we love to make 2 or 3 kinds of salad to eat with this pie....😂 Like our seconds lover, its our Asian salad with my special dressing !!!! And love to eat with honey melon and cantaloupe wrapped with prosciutto . AND The BEST and its a BIG MUST a good Italian crusty bread with homemade spinach dipp....OH MY WITH some pink bubbly wine( so much flavors now and soooo refreshing and good with that kind of meal!!!) Its a PERFECT REFRESHING DINNER !!! Delicious!!!!😊

My recipe was committed to memory, but it has been so long since I made this incredible dish I just knew some ingredients were missing... So I am forever grateful for you sharing your kitchen, your time, and of course your pie with us!! I almost felt like I was sitting across the counter from you sippin' on sweet tea!
Sadly it is my little counter top induction burner.I do not hear it. Until I see it on Utube .A-regular Counter top burner does not her get hot enough. I also have to use special pans. I very seldom use it anymore . I do not like the noise either
You'll find there's a MUCH crispier crust if after it's pre-baked, you brush it with an egg white and pop it back in the oven to seal the poke holes. Cheese isn't going to keep it from getting soggy.

I’ve always used Vidalia onion slices and have not tried with green onions, but I think it’s a great idea and can’t wait till we get ripe tomatoes so I can try. I 100% agree with you on the tomatoes are best eaten in tomato pie (and tomato sandwiches!) ❤ thanks for the video!
