I just stumbled onto this video and was pondering on how delicious a tomato pie would be, this wonderful lady was like a flashback to my grandmothers, it was so great listening to her and watching her cook, brought back so many great memories watching my own grandmothers when I was little. @TinkerTailor4303 But I WOULD make them in Colorado and stated so in my original comment. What I meant is that the Tomato pie isn't our tradition, we have other culinary traditions here. Again, I DID say I would make a tomato pie as per the Davidson Orchards sharpest chef! Want a video to see my culinary skills and truthfulness?
It comes out A LOT better if you put a layer of the cheese mixture between the layers of tomatoes and then spread the rest on the top... But it is an absolutely delicious recipe!!

I cheated a little bit in that I mixed some of the scallions with cream cheese and spread that on the bottom and covered that with some sweet Italian sausage I fried up. I then pretty much followed your recipe the rest of the way and it turned out really tasty. Thanks again, I'll make that again for sure.
Oh, that looks delicious. My picky eater, who loves tomatoes and cheese, might even like this. Going to give it a try. Off to the store for some nice field tomatoes, mayo and shortening. Used my last for Coronation grape pie.
In New York, I grew up on beefsteaks, either home grown or store bought. Here in Atlanta, they are about as common as dinosaurs. We don't have them, we don't see them, after more than 35 years of living here, I can't find them anywhere! Any locals have any clues as to where one might find a beefsteak tomato in Georgia? I'm not driving to New Jersey to find them.
It is so much easier to preheat a sheet pan while preheating the oven and placing the pie on it. This cooks the bottom crust to reduce sogginess. The whole pie weight thing is a pain. Prick crust with fork to avoid bubbles. Much easier.
Seriously, you need a written recipe for sliced tomatoes, green onion, basil, garlic and a cheese mixture with mayo? Maybe you should learn how to do basic cooking if you can’t follow what she did. There was a picture of the recipe on the screen at the end. Guess you can’t read either. But you know how to be rude

I would add some real bacon bits to the cheese mayo mixture. When pie is done serve a slice with some shredded lettuce on top. BLT Tomatoe pie.

Also, I've heard of spreading a layer of grated cheese on the crust before pre-baking, for a little extra flavor.
