So baking soda is bicarbonate of soda in the UK and baking powder is another product. Americans often say use baking soda in their recipes but I never know whether to use Baking powder or Bicarbonate of soda. Thanks for clearing that up.

Baking soda
Provides lift and neutralizes bitter or acidic flavors. Baking soda needs an acid to react, so it's often used with an acidic ingredient like lemon juice, buttermilk, cream of tartar, or citrus juice.
Baking powder
Helps baked oatmeal rise and lightens its texture so it's not too dense. Baking powder reacts with heat to provide lift.
Oat flour
Recipes made with oat flour may not rise as much as other flours, but they have a soft texture and slightly toasted flavor. Adding baking powder or baking soda can help increase the rise.

Well that's great information thanks for a very concise explanation. I was listening to 6 minutes of somebody else talking like she was in a kitchen that had an echo effect which was distracting to understand what she was your explanation is the soda is good for single rise effect for flat cookies. The baking powder gives double effect which is great for baking cakes thanks again that makes a lot for the explanation and easy to understand, besides you have a wonderful smile.. thank you stay well and happy holidays

Try the internet. There's a lot of useful information there about that sort of thing, if you're not too lazy to get off your butt and do it yourself.

Useless. Fails to mention the most important piece of information. It's not about the rise, but about the acidity:
"The primary difference between baking soda and baking powder is that baking powder already contains an acid in the chemical mixture, whereas baking soda needs an acidic ingredient to create the rising reaction. Use baking soda in recipes that have acidic ingredients like buttermilk, lemon juice, or vinegar; use baking powder in recipes that do not have acidic ingredients, like biscuits, corn bread, or pancakes."

Well you added nere a good piece of information, thank you. Nevertheless I believe most of the searcher for the difference between baking soda and baking powder were looking for the information mentioned by Warren Nash.. to use the correct one when baking.
