- 「今次做泰式粉絲蝦煲,不過粉絲才是主角。它吸盡了蝦湯的味道,連泰國人吃完都讚亞萊嘜嘜。」名廚Ricky笑說。
首先把粉絲浸好,跟著準備蝦湯。他建議選用有頭有殼的蝦,因為用蝦頭去煮出來的蝦湯,味道更勝一籌。「先把蝦頭切出來,必須去掉蝦殼,如果連殼一齊煮,只是煎香了殼,蝦頭裡面的肉及羔未必煎得到。」
煮蝦湯不用心急,待蝦頭煎出香味,才下雞湯及清水。別以為要長時間把它滾到濃縮才叫好,其實蝦湯只須濃縮了大約一半,便可以隔它出來。
「在泰國吃的粉絲蝦煲,經常有很多肥豬肉。除了增加香味,味道會更多層次。所以我也下了切粒豬頸肉,跟其他配料爆香之後,才加入蝦湯及粉絲。待粉絲吸飽蝦湯,最後放進清洗乾淨的蝦肉,炒勻之後便大功告成。

材料 (Ingredients) :
泰國粉絲 3包
Thai Glass Noodle 3pkt
豬頸肉 50克
Pork secreted minced 50g
冬蔭醬 15克
Tom Yum Paste 15g
帶殼海蝦 300克
Prawns 300g
雞湯 500克
Chicken stock 500g
清水 500克
Water 500g
蒜頭 30克
Garlic 30g
乾蔥 70克
Shallot 70g
芫荽頭 3條
Coriander Stem 3pc
指天椒 3條
Red Chilli 3pc
青蔥粒 20克
Scallion 20g

Hi Ricky, Very practical recipe 🙏. In Canada we have no choice we have to buy frozen shrimps but always out of luck. A box only has a dozen shrimps but 3 or 4 pieces' heads are rotten. Can you tell me what brand and their origin.. May we share what brand is that 冬蔭功醬?Thanks.🇨🇦
You don't want the shrimp heads because they are full of shrimp forces and shrimp urine and shrimp stomach, shrimp lung, shrimp kidney, all the interior organs. DIRTY!!!!!
