    Putting the dressing in the bottom of a mix bowl or serving dish is a restaurant trick I learned many years ago. The greens are fresh when served and the dressing is ready to go. Wonderful to see it again, thanks Chef !!

    Well hello there friends! I just bought three chickens at Costco today - for the price, you can’t beat them. I will use some of them in your chicken salad recipe.
    Also good in salads are sweet things - raisins, grapes, mandarin or regular oranges, nice contrast to the savory things.
    Thank you Chef!

  • @ReedBetweenTheLines
    @ReedBetweenTheLines 11 месяцев назад +1

    I've now made this twice.
    The first time I used blackberries. The second time I used kiwi fruit.
    The lesson I learned the first time is not to season the chicken too much. It's better to underseason it than to overseason it because the chicken isn't the star of the show.
    The dressing is the star.
    Followed by the fruit.
    The chicken can be replaced with any number of other proteins as long as they aren't too tough or chewy.
    An excellent dish to get rid of any extra veggies that you have on hand.
    And it's just as easy as Chef makes it look.

      Trying this.
      You mentioned a lemon vinegar? Tell me more.
      Also, what kind of stove top grill is that?
      I “butterflied” my chicken tonight. I did a little improv on your recipe and rolled it in creole powder and threw it in the air fryer. It’s pouring down rain for grilling outside and I don’t have a cast-iron stove top grill.
      I hand-picked some lettuce and spinach. First of the cucumbers out of my garden, fresh tomatoes from someone else’s garden. I also added Vidalia onions and fresh croutons just for more decadent variety.
      Love you, chef. ❤

    That looks scrumptious and you give us helpful tips and reminders in every video. I've started using "sanitized" water in a pot (capful of bleach and soap) in the sink like you do and clean-up time has lessened. Thanks for showing a salad with a special homemade dressing. I've been making salads like crazy during this heat wave. I don't like using the oven when its really hot out. I live in SE Louisiana, U.S. and it is a 24/7 sauna right now. I still use the stove because I can't get around that. Italian pasta salads, layered salads, seafood salads, coleslaw in vinaigrette, coleslaw with mayo-based dressing, even those blasts from the past--congealed salads. We also eat sushi and sashimi much more. Please share some more salad-type dishes if you feel like it. Fruits and veggies are in season so we might as well take advantage.

    Very interesting salad dressing. I think I'd sub out the black pepper for red pepper flakes or cayenne adding black pepper on top of salad serving. Diced Honey Crisp or other sweet fruit, melon, or maybe blackberries, in season here now. Mix ingredients and spices to taste. I need to buy an emulsifier.
    Be well

  • @KimOpperman

    Hi Chef. You inspired me to try the chicken salad. Actually, when I open the fridge to get some ice, a package of chicken breasts fell out on the kitchen floor and I didn’t find it till morning. So my freezer selected the menu of your chicken salad.
    I used fresh herbs from my garden ( parsley dill chives cilantro.)
    The vinaigrette -My “unemulsified” version
    I did not have my blender available or even my mortar and pestle, I chopped herbs finely, shook it quite a bit and put it in the fridge overnight. I added a couple chunks of raw sugar rocks to the mix because I like sweet.
    Just like you. ❤️😎😉
    I butterflied open the chicken and rolled it in creole powder and broiled it in air fryer instead of grilling it. The rest of the ingredients I had in my garden or my fridge.
    PS I think I’m going to open a can of garbanzo beans, rinse them off, chill them and add to the salad. They just sound like they would be good plus some fresh made croutons.

      Give it a go :) but one thing many chefs suggest, is that you rub or brush your fat to the meat and not to the pan. The fat in this kind of pan doesn't do anything on the bottom, but potentially only burns and transfers bitter flavors to your chicken or other meat.

    • @MikehMike01
      @MikehMike01 11 месяцев назад

      They’re pretty useless, they put lines on the food but you don’t get any grill flavor. Plus they’re difficult to clean. A regular flat frying pan will make better chicken.
