Nice easy recipe. When using chicken breast I like to marinade it with cornstarch, oil, soy sauce and baking powder. Keeps it from drying out. Not necessary if using dark meat. Jasmine rice is my favorite. But never used butter until this video. Thanks for the tip. Takes the best rice (IMHO) to another level. "Everything's better with butter"!

Looks wonderful, but I have the chicken or pork cooked first then fry the rice while adding seasoning; then I add corn and peas at the very last the eggs to cook in the heat as it cools. All you miss are some good pork egg rolls.

So many variations for fried rice. My takeaway store makes an omlette first, then makes the fried rice, and introduces the omelet at the end.

Most the fried rice I've made is fairly "Asian." I can't imagine serving Chef Jean Pierre's fried rice with Mongolian Beef, but it would make a great side dish for a lot of things. I've made plenty of risottos and pilafs, but this gives me ideas for things like Mediterranean fried rice, oh, which I see has tons of recipes online.
Anyway, I'll be doing some more fried rice experiments now.

    • @leedimeocoffey978
      @leedimeocoffey978 2 года назад +64

Once he’s 90, and still cooking, maybe THEN, you can call him “OLD”‼️ Chef he’s really more like a BIG kid in his 30s‼️😂
When you’re young yourself, you think people in their 50s and 60s are actually old… Until you get there yourself!
The secret to youth is not acknowledging THAT time exists, because your mentality overrides it. I am jaded, probably, because my grandmother (typical Italian grandma/fabulous cook) lived to 102, so when I hit 50, I said to myself, “that’s good, I’m only halfway to gramma!😂“, because I intend to hit a hundred too…
      COOKING! 😃
Whatever makes you happy keeps you young… That’s why this chef exudes youth, in my humble opinion… Many thanks for Your comment, because you triggered some good remembrances. Cheers and thanks.

I sent this vid to my 16 yr old granddaughter. She took some cooking class at school and seemed interested. As a little thing she had stomach issues, got bad medical advice ( my opinion) and eats very little to this day. Was hoping this would bring her around, a cooking interest. So I bought HER the Artisan Kitchenaid mixer of MY dreams (OVERKILL I KNOW) still hoping! To my joy she has since told me she was well aware of Chef JP from class. He says it isn't a traditional egg fried rice. It doesn't even try to be. But the rice is good, he used a wok, good tossing, JP could make a traditional version if he wanted to I think. But he wanted to make it french and use butter and western ingredients since that's what he had on hand. French Fried Egg Rice.
And I've made it this way before, but with cooking oil and it is true. The distinct egg pieces which are a little softer and some western veggies like white onion instead of spring onion is great. Only thing I would have done differently is the garlic and ginger.

Absolutely love your channel and OMGOSH I have so many of your recipes on cards immediately ready on my fridge for my favorite recipes! Good grief LIKE 5 immediate favorites! I'm still trying to get settled after moving... FINALLY getting organized enough to get back in rhythm! So I can't wait to try this recipe! I love the comments! You are just superb! Saw the vegetables video pop up last week but I need to watch it! And I will do this weekend. Thank you so much Chef John Pierre you are just an incredible chef and make everyday cooking look so simple.. I really love how you explain why you cook things a certain way, especially those scrambled eggs! I actually make that and take it to work for breakfast! Hope you're being good to yourself you deserve it and what a great team you have!

I absolutely love Chef’s channel because it has truth in advertising. Cooking and learning. The comic relief is very engaging, also. Look forward to our next lesson.

so chef....one thing i do, because my wife DEMANDS IT, is I take 1/3 of the white rice and fry it separately until brown and very crisp.
she demands some of the rise be crispy.
then I add to the whole and mix before adding my scrambled eggs at the VERY end.

Well shoot, Chef! That's close to the way I sometimes cook; only I never thought of using my wok and adding egg and oriental sauces. How about some saki on the side? For medicinal purposes, of course! 🙂🙃😉❣

U make this recipe look easy & I'll try it. My mom used to make a pan fried spinach patty. I believe frozen spinach, egg & maybe cornstarch. Your hash browns recipe reminded me & do you have a spinach type fritter recipe to share with us. Thank you

    So, sad 😔
I'd tried to make the clarified butter
    But, it didn't work ouT.
So, I'll keep watching to learn!

Chef. I like soft omlette. The chinese places overcook the eggs on nuclear heat making it rubbery.
I also like sprouted beans, carrots and bell peppers in the fried rice.
