    This chicken fried rice recipe takes 15 minutes to make. It's absolutely delicious and everybody loves it- no doubt about that. Sometimes maybe you don’t know what to cook for dinner, this is it! It is better than your local take out fried rice AND healthier.

    *INGREDIENTS FOR THE CHICKEN FRIED RICE [serve 1-2]*
    *For the chicken marinade*
    - 150 grams of chicken
    - 1 tsp of corn starch
    - 1 tsp of soy sauce
    - 1 tsp of vegetable oil
    - a pinch of baking soda(NOT BAKING POWDER Sorry for the audio mistake in the video)
    *FOR THE STIR FRYING*
    - 2 eggs
    - 3 tbsp oil
    - 2 cups of cooked rice
    - 1 tbsp of minced garlic
    - 1/4 cup of red onion
    - 1/3 cup of green beans
    - 1/2 cup of carrot
    - 1/4 cup of spring onion
    *FOR THE SEASONING*
    - 1 tbsp of light soy sauce [Pearl River Bridge Natural Brewed Light Soy Sauce: geni.us/wABlLXf]
    - 2 tsp of dark soy sauce [Pearl River Bridge Superior Dark Soy Sauce: geni.us/T4vy]
    - 1/4 tsp of salt or to taste
    - pepper to taste
    *HOW TO MAKE CHICKEN FRIED RICE*
    - Cut the chicken into small pieces. Mix it with 1 tsp of corn starch, 1 tsp of soy sauce, 1 tsp of vegetable oil and a pinch of baking soda. Set it aside for 30 minutes.
    - Crack 2 eggs. Beat it well.
    - Heat up the wok. Add about 1 tbsp of vegetable oil. Give it a toss, so the bottom is coated nicely.
    - Wait until there is smoke coming out. Pour in the egg. Will take about 30-50 seconds to get the it fluffy. Break it into small pieces and set it aside.
    - Add more oil into the same wok. Heat it up and add in the chicken. Saute it about 1 or 2 minutes. Then push it to the side so you have room for the vegetables. Dump in all your veggies, which are 1 tbsp of minced garlic, 1/4 cup of onion, 1/3 cup of green beans and 1/2 cup of carrot. Stir-fry for 2 to 3 minutes.
    - When the onion should be transparent, Add some salt to taste. Mix it well.
    - Take it out.
    - Next is the rice. Loosen up the rice before frying.
    - Turn on the gas to high, Heat up the wok for about 15 seconds. Then add 2 tbsp of vegetable oil. Put in the rice right after that. Use your spatula to break down the big pieces.
    - You need to stir fry this for 3-5 minutes. Then add in our seasoning, 1 tbsp of light soy sauce, 2 tsp of dark soy sauce.
    - Now you really got to mix this. Do it fast. Because the wok is hot, the liquid will evaporate quickly- then you will never get to mix it evenly. Once can not see white rice, add in all the ingredients. Veggies, meat, oh and the egg...
    - Toss everything together. Give them about 2 minutes to be infused with each other.
    - Add in the spring onion right before serving.

    At 0:43 I said baking powder
    At 0:51 I said baking soda
    That was a mistake, I am so sorry. Please understand baking soda and baking powder are not the same thing, for this recipe, you need baking soda no baking powder.

      Baking power is simply baking soda with a chemical added, physically not chemically, that breaks down into an acid when heated. The acid breaks down the baking soda producing CO2 when heating/baking/cooking. Baking powder or baking soda should both accomplish the same purpose, for what you are doing.

      Joseph Inhiding Baking powder and Bakng Soda do not produce the same result when cooking or baking. That's why recipes call for one, the other or both.

      +Jolene - I'm sorry I wasn't clear when I qualified with "for what you are doing". For the purpose of tenderizing the meat the active / important ingredient in both is the Baking Soda. The minor ingredients in the baking power will not have a significant impact on the tenderizing.
      Certainly if you're baking something using baking soda (alone) will not work to leaven the dough.

    We make this fairly often. Our little tip is oyster sauce and sesame oil along with soy sauce. Hits a higher flavor profile. Thanks for the recipes

      @@josephmorales7497 the same way as the soy sauce. After it's mostly cooked. Dont brown your rice with it. It's a seasoning oil. Not really a cooking oil.

    I made this last week and its the best chicken fried rice I have made. Fresh veg does make a difference (I had used frozen before) - and the chicken in cornstarch, oil, baking powder and soy is a good trick to make the chick succulent. I now use that for other recipes! (without the soy)

      You hit the nail on the head there. So many videos have noise (music) so loud you can't hear the speaker. And the speaker is yelling at the beginning to try to seem exciting. And a loud, annoying intro that goes on for a full minute or more. They think they are auteurs.

    This girl is so adorable and the recipe is quick, easy and delicious. I have doubled and tripled it with no problem and have even put it in a crockpot to stay warm at a party. Highly recommended! Please don’t tell her I use frozen vegetables.... where am I going in the dead of winter in the northeast?

      You can get carrots and onion year round. I do use frozen peas though. Which she calls green beans. But clearly peas. But it's all good! Upper midwest girl here.

    I just followed this recipe and it turned out PERFECT. I used onion and green pepper instead of garlic. And I didn't have dark soy sauce but in another video I watched once they said the "secret to chinese cooking is Oyster Sauce" so I had that on hand. So I used 1 tbsp of Light Soy Sauce and 1tbsp of Oyster Sauce and it was truly better than takeout! Cheaper, tastier, and fresher. Thank you for this step-by-step video!

    I’m late! But just made this..... it’s soooo gooddddd! But I made it with a little twist. Before frying the rice, I fried a whole bulb of minced/ diced garlic just so the oil is infused with garlic, then putting the rice in to fry. I also marinated my chicken in corn starch, dark soy sauce, oyster sauce, salt & pepper and paprika! Didn’t have any light soy sauce and baking soda.. turnt out awesome!! Also, I didn’t have overnight rice, cooked up a fresh batch and put the fresh rice in the freezer for 20 mins! Helpful trick hehe

      Bellx Br I do the same thing with rice, I just put in the freezer for 15-10 minutes, taking out once to stir and then put it back.

    I tried this (switched up the veg a bit because of what I like, and added ginger because I personally like it) and it turned out great! It’s delicious, the chicken tip was AMAZING!!! The chicken was super juicy and didn’t get dry at all! Super flavourful and mouthwatering 🤤🤤🤤🤤

    I am in the Caribbean and in my location we have many good Chinese restaurants but they are all Cantonese style food. I miss the Sichuan restaurants in New York and have to do-it-yourself. I can buy ingredients online but your channel is most helpful in how-to. A big thank you!

      Just to note that most of her stuff she makes is Cantonese style. Not Sichuan. Sichuan is those very very spicy ones that use a lot of red chilies. 🌶 She doesn’t make many Sichuan dishes just a few. Not many can eat real Sichuan dishes in China actually unless you’re from there. Many believe it’s actually bad for your intestines way too many chilies so not many eat it. There’s another channel on RUclips that makes strictly Sichuan food, it’s Liziqi. She lives in Sichuan region and uses tons of red chilies in her cooking. Don’t also base NY or American Chinese restaurant food as authentic Chinese food. They’re far from authentic Chinese food in China.

    I am an American in my 60s. My recipes are a lot like yours. They come from my mother who spent her younger days in New York City in the 1930s. She used to go to the ABC restaurant at 34 Pell St. (Chinatown). It is closed now but I was lucky enough to go there in the 1960s.

      Split a chicken breast and diced it up. Then I threw baking power on it. Rinsed that off and dried. Then corn starch. 😅
      I don’t follow directions very well. Tend to go off what I hear and not read. 🤪
      No dark soy so I used some Yoshida sauce.
      But the chicken did cook quickly. I’m just not that fast.

      @@harryl7946 She corrected herself on the baking powder, its baking soda. It doesn't get rinsed off. This also works with cooked left over chicken and canned veggies, just drain the veggies. If you use cooked leftover chicky, no baking soda. Baking soda tenderizes raw meat, not cooked. I'm the king of slow these days, don't worry about fast, LOL

      The common Chinese egg fried rice does not have sesame oil in them. Those that you're used to eating must be some jazzed up version for western taste buds.

      @@cashmerehazel21 Agreed, sesame oil is not compulsory, you can make an absolutely delicious chicken fried rice without it, as this recipe shows. In the pandemic we need recipes without fussy, extra ingredients! Putting a delicious meal on the table when you don't have additional fancy things like sesame oil is what it's all about.       Nana Lady Hi yes I just used regular white rice, I let it go cold before I placed it in a frying pan because I didn’t have a wok, it didn’t go gluggy then.

    Thx for the recipe. I tried it tonight and it came out great. I had to make a few changes I used what I had. I didn't add any chicken, I used 1 cup of frozen season blend (which is cut up onions, bell peppers, and celery), 1 cup of frozen mixed veggies, I used garlic powder for my veggies cause I didn't have any minced garlic. I didn't have any light soy sauce, I used 3 Tbsps of dark soy sauce and my food still came out good. I'm so glad I don't have to go to a restaurant I'm looking forward into trying more of ur recipes. I truly appreciate u sharing ur recipe. I can't wait to make it again. Thx a mill😊

    Hi,this is my wife's favorite.My new Woks get used every day.Our friends are honest when they comment on my cooking and they say that this is the best. I try to send them home with a little bowl if there is any left which is rare.They say it's as good or better than any take out.My wife and I think it's the best food that I have cooked,ever.I don't know what I enjoy more,cooking,eating or watching my friends eating and enjoying such delicious Chinese food.thanks again!

      Here is a secret tip: Add two pinches of chicken bullion powder, a pinch of dashi powder, one tsp oyester sauce, tasting soy sauce (this has msg) , and tsp of butter in the end will elevate this dish to whole another level.

    Helpful tip here: if you can't use day old rice, cook up a fresh batch then set it in freezer for 15-20mins. This gets rid of some moisture in rice, so rice doesn't stick together and become a glob when reuse in fried rice recipe

      Cheryl Tham My lil boy and I fancy fried rice out of the blue sometimes and realise we don’t have old rice that’s even a couple hours old. So, I do the same thing you do - Cook the rice and let it rest in freezer top drawer for 20-30mins. Only difference is I don’t turn off the rice cooker straight away when it’s done. I let it sit there for 5mins, then open the lid and leave it like that for 5 more mins. Then, I take the rice out, place it in ziplock/freezer bag, add a bit of soy sauce to it, close the bag (full of air- space for the rice to move about) and toss the bag around gently for a min. Afterwards, I add a bit more soy sauce and toss it around again. I choose that method instead of using a spatula to separate the rice, to avoid the risk of mushing the soft rice. And, the cold soy sauce(that I keep in fridge for longitivtiy) helps the rice separate nicely in the bag, plus it’s already flavoured as a bonus. 😂 Also, I left the bag open in the freezer to let the heat and moisture out.

      Great tip. Thanks. Never knew this. I use some pre-cooked rice by Uncle Ben and that too does the job. But that's the lazy me talking. Day-old rice is best. Now the freshly-cooked-20-min-in-the-freezer technique will have to be tried too :)

    Just made this today following your way and it turned out so rich and flavorful.
    Omitted carrots. Added bean sprouts, mushrooms. Also did a combination of chicken and shrimp.
    To the rice I added both oyster sauce and dark soy sauce.

      Just a tad of baking soda to marinate most meats, not seafood, will tenderize meat.
      I use a teaspoon of baking soda, xio xing wine, soy sauce, touch sesame oil for the marinade. Sometimes I will use corn flour instead of baking soda though. use only a little of each ingredients. I hope this helps.

    Best chicken fried rice recipe on RUclips. So aromatic, the flavors are amazing. I didn't use "overnight" rice, I just made it early, spread it on a baking pan and let it evaporate for like 30min. I used veggies from a can but regretted it as they got mushy. Making it again with frozen veggies, aside from that, this was GLORIOUS.

    I was looking for a recipe for Chinese fried rice and with 8.7M views, I had to try this recipe. I followed this but, made it vegan and used cauliflower rice instead and it's delicious! It's a very forgiving recipe as Souped Up Recipes said, I used mushrooms and carrots. Delicious, and ultra low carb and vegan with my substitutions!

    You used some dark soy for that beautiful dark color to finished product. That makes you my hero. I was basically raised by Cantonese family here in Virginia. They had a restaurant back in the 80's, and your fried rice looks exactly like they would make it.

    This is how it's done!! Cooking each component of the fried rice separately is best so everything gets fried nicely and evenly - Most of the YT videos get this wrong and cook everything together in the pan at once. Done that way, the result is a mess.
    I usually only have one type of soy sauce in the kitchen, so I use normal light soy sauce and add oyster sauce and Shaoxing wine to deglaze. But besides that I make my fried rice exactly the same. Thanks for the video.
