IMO, the reason Chef Jean-Pierre is so beloved by his us his fans is not because of his culinary skill or because of his talent as teacher or his enthusiasm for cooking or even his delightful sense of humor. The most fascinating thing here is to understand that 50 years ago or so, it wasn’t very easy to get a recipe from a chef. They kept things to themselves. It’s amazing how there are folks like Chef Jean Pierre that love to share his expertise and recipes with us. He is a gem indeed.
One of my fave shows from years ago was "Great Chefs, Great Cities" where you only saw a quick shot of the Chef and the rest was from mostly overhead and side cameras showing the actions and techniques. Learned a lot from those as well.
Can I echo the comment about making cooking more interesting. As a mum cooking every day gets very monotonous so inspiration is like a breath of fresh air.

Thank you for this episode. I just retired from 45 years as a commercial painter. I passed my business on to my partner. Now I have even more time to be in the kitchen. Growing up I stood beside my mom learning the basics “ don’t pack the flour, fold it in,etc. chef you truly inspire and show me that I can do these wonderful recipes. I live in alaska and have fresh King Salmon often. My favorite way is to cut 3/4”, lay on foil, little salt and pepper, inside Bar-B-Que. the flavor of the fish is AMAZING! Chef. You are the most humble and most talented chef on You Tube. I grew up cooking and canning with my mother in the kitchen, but lost real interest as a young adult. You are one of a very select group of culinary experts that has reinvigorated my desire to cook better and master technique. As someone who works in entertainment industry I must say I'm pleasantly surprised to learn Jack is someone you brought on at the beginning with no experience. He does a wonderful job editing and I love knowing that you two have known each other for so long. Your whole team is so amazing and you are such a joy to watch and learn from. As someone whose about to start their own cooking channel, you've personally taught me about 4 things I've never seen anyone else do that are so amazing. I have Cerebral Palsy and we used to make community meals every week, with and for other people with disabilities. It was so much fun watching my friends learn to cook and having fun doing it.
As an avid cook, I was fortunate enough to come across Chef JP’s channel from the start. Since then, he has elevated my skills to levels I never thought possible. I’ve now become the exclusive cook during the holidays and events for mine and my extended family…..as JP mentioned, it’s rewarding when you cook well. I think you were so lucky to have family that taught you so young. My grandma taught me how to cook the perfect white rice. And I cherished that one lesson.
This makes me feel so lucky of all those meals at your school yet sad that covid made it impossible to continue. For those who have not experienced JP in person think about being able to have him cook a meal for you and in front of you for about the same cost of actually just buying the meal at a restaurant but being taught how to cook it at home and experiencing his humor and charisma. Chef, I have learned many things from you. But the day explained that water my friends is the enemy. Changed my World. Chicken or Beef or Vegetable broth. Hopefully fortified as you taught me. I love that you are open about the fact that you don't like certain foods. It seems a lot of those are because you don't like the texture. That is SO relatable to me and to our family. I think we're pretty adventurous when it comes to food, and we love trying different types of food. At the same time, disliking a flavor or texture doesn't make you less of a foodie, it just means you have needs and preferences, and that's very much ok.

The jambalaya is boss, but the written recipe didnt work out. I needed raw white rice, if i remember the written recipe calls for parboiled. The flavor was great, so once i did it again and used raw rice in the recipe, it came out amazingly well. A top notch low budget meal that can feed a crowd. First recipe from him i tried, after his shepherds pie video got me here, was the mushroom. I felt like a kitchen master that day, the finished product is THAT good looking. The cheese mix instantly made me nostalgic for my late mother. She used to buy a similar product and I'd steal it all for crackers. I'll be forever humbled by this man casually teaching me how to make my mom's favorite cheese spread. His recipes always teach you multiple things. The mushroom video is short but jam packed with some overlooks basics. Remove the gills, balance the dressing, a cheese spread AND a balsamic drizzle. Mama mia! I bought the dishes and then made the lava cake. Screwed it up. Didnt set. I think the recipe's timing is off, or i dont have the same size container. I havent redone it yet, so im not willing to blame the written recipe. I say written recipe because its sometimes not exactly as it was in the video. Clearly, he's a wiz with food and struggles to articulate what he did. He knows how much/how long he needs by looking and just fills up his pots unless purposefully being meticulous, in which case the written recipe is, too. We need someone to help rewrite the recipes for Chef. I have thought of offering to do it, but im just a learning home cook, so i figured a culinary student or another retiree from the industry hanging out around here would be better suited. Sorry to ramble. Gonna go pick some recipes ive been waiting to move on and make a week of it. :)
I absolutely loved the Q & A, so many questions answered I was wondering about, but did not want to bother you with. Personally, I think a Q&A about every 2 months would be great, and by the way I love the idea of meet and greet! I think you should do a couple of regional meet and greets, specifically tied to say culinary festivals or something of that nature. Chef Jean THANK YOU and your staff that make it all happen for sharing your talent for teaching and cooking in such a entertaining way. My husband and I love to watch your videos together, it is not often we agree on video content to watch, but you get the gold star there!

Thank you for this episode. I just retired from 45 years as a commercial painter. I passed my business on to my partner. Now I have even more time to be in the kitchen. Growing up I stood beside my mom learning the basics “ don’t pack the flour, fold it in,etc. chef you truly inspire and show me that I can do these wonderful recipes. I live in alaska and have fresh King Salmon often. My favorite way is to cut 3/4”, lay on foil, little salt and pepper, inside Bar-B-Que. the flavor of the fish is AMAZING! I so wish I could give you a nice King salmon and watch you work it. I could send you one????? Blessings and Thank You. I remember hearing a phycologist say “We are happiest when we are learning”

Chef. You are the most humble and most talented chef on You Tube. I grew up cooking and canning with my mother in the kitchen, but lost real interest as a young adult. You are one of a very select group of culinary experts that has reinvigorated my desire to cook better and master technique. Now, once again I love to cook and am proud of what I can do in the kitchen for my family and friends.
Thank you from the bottom of my heart for being one of the best teachers I have ever had. At 57 that is saying something. As someone who works in entertainment industry I must say I'm pleasantly surprised to learn Jack is someone you brought on at the beginning with no experience. He does a wonderful job editing and I love knowing that you two have known each other for so long. Your whole team is so amazing and you are such a joy to watch and learn from. Thank you chef for everything you teach us and thank you Jack and others behind the scenes who help to bring us delicious and simple recipes. I just made your mushroom pasta recipe again and every time I make a recipe you give I say out loud " goddamn it, the chef did it again!"
I was impressed also of his hiring Jack, with no experience... a tribute to his character of hiring & encouragement of others.
I love that Jack said, “I don’t want a favor, I want a job!” That shows the dedication he has. I think Jack does a wonderful job! For those who have not experienced JP in person think about being able to have him cook a meal for you and in front of you for about the same cost of actually just buying the meal at a restaurant but being taught how to cook it at home and experiencing his humor and charisma. (while BYOB!)

Chef, I have learned many things from you. But the day explained that water my friends is the enemy. Changed my World. Chicken or Beef or Vegetable broth. Hopefully fortified as you taught me. I'm a southerner and we love our sausage gravy. Now that I use broth instead of water Wow. Looking forward to learning more.

I love that you are open about the fact that you don't like certain foods. It seems a lot of those are because you don't like the texture. That is SO relatable to me and to our family. I think we're pretty adventurous when it comes to food, and we love trying different types of food. At the same time, disliking a flavor or texture doesn't make you less of a foodie, it just means you have needs and preferences, and that's very much ok.

The jambalaya is boss, but the written recipe didnt work out. I needed raw white rice, if i remember the written recipe calls for parboiled. The flavor was great, so once i did it again and used raw rice in the recipe, it came out amazingly well. A top notch low budget meal that can feed a crowd.
First recipe from him i tried, after his shepherds pie video got me here, was the mushroom. I felt like a kitchen master that day, the finished product is THAT good looking. The cheese mix instantly made me nostalgic for my late mother. She used to buy a similar product and I'd steal it all for crackers. I'll be forever humbled by this man casually teaching me how to make my mom's favorite cheese spread.
His recipes always teach you multiple things. The mushroom video is short but jam packed with some overlooks basics. Remove the gills, balance the dressing, a cheese spread AND a balsamic drizzle. Mama mia!
I bought the dishes and then made the lava cake. Screwed it up. Didnt set. I think the recipe's timing is off, or i dont have the same size container. I havent redone it yet, so im not willing to blame the written recipe.
I say written recipe because its sometimes not exactly as it was in the video. Clearly, he's a wiz with food and struggles to articulate what he did. He knows how much/how long he needs by looking and just fills up his pots unless purposefully being meticulous, in which case the written recipe is, too. We need someone to help rewrite the recipes for Chef. I have thought of offering to do it, but im just a learning home cook, so i figured a culinary student or another retiree from the industry hanging out around here would be better suited.
Sorry to ramble. Gonna go pick some recipes ive been waiting to move on and make a week of it.

I absolutely loved the Q & A, so many questions answered I was wondering about, but did not want to bother you with. Personally, I think a Q&A about every 2 months would be great, and by the way I love the idea of meet and greet! I think you should do a couple of regional meet and greets, specifically tied to say culinary festivals or something of that nature. Chef Jean THANK YOU and your staff that make it all happen for sharing your talent for teaching and cooking in such a entertaining way. My husband and I love to watch your videos together, it is not often we agree on video content to watch, but you get the gold star there!
