UK is a democracy and this is the tradition. What's your problem? The King is the Head of state above the party politics, as so many European presidents who have just a ceremonial status. However, they all like the King, have an important job in taking care of continuity, bringing experience and stepping in when some high-level actor with no political ambitions but just the best of the nation in mind, is needed. As so many former PMs have said, that is extremely valuable when the PMs face problematic situations. No doubt, a lot of experience was transferred by the late Queen to the King and the same is happening from Charles III to the current Prince of Wales. No party political barriers here, but pure continuity.

In the UK we have tried both absolute monarchy and a republic (under Oliver Cromwell) and we found both to be flawed. In the end, we settled on a constitutional monarchy in 1688 and it seems to have kept the UK largely stable since then.
You misunderstand the delicate legal checks and balances in the UK's constitution which this opening of Parliament reflects and satisfies. The PM and other ministers hold power only by the authority of the monarch. Parliament only meets with the consent of the monarch. All laws passed in parliament have to receive royal assent to become law. In extremis, the King has the reserved powers to dismiss all government ministers, dissolve parliament and require a new election should the government go rogue or become incapable of governing. For the same reason all MPs, police, judiciary and armed forces swear an oath of allegiance to the monarch, not the government, so that no politician can orchestrate a military or political coup. In effect, the King is the people's servant as the ultimate check on the powers of politicians should such checks become necessary. The monarch, the House of Commons and the House of Lords are all part of a delicate set of checks and balances in our constitution so that none of them can step out of line or obtain absolute power.
The State Opening of Parliament neatly delineates those constitutional checks and balances within its ceremony and procedurally satisfies the legal requirements of our constitution for Parliament to sit. The King opens the parliamentary session and summons both Houses to listen to the speech (showing that the HofC and HofL only meet by royal authority), the HofC shut their door in the face of Black Rod, the King's official, and the speech is written by the government, not the monarch (signifying that the King cannot interfere in discussion of potential laws by the HoC or routinely interfere in government) while the HoL allow the MPs from the HoC to enter only as far as the bar of the HofL and no further (signifying their independence from the HoC as scrutineers of HoC legislation). While we could dispense with the attire (but then it might become rather banal and attract less foreign interest in the UK?), the event itself is not just ritual for the sake of it but is constitutionally significant and legally necessary.
